I lived on a farm and we used to "candle" the eggs and keep the two or even three yolk-er to ourselves!.!.it was considered good luck!.!.but we candled them (like a primitive x-ray_) them because we did not want to sell the customers any fertilized eggs!.
my wife is from the Philippines and they eat BALUT!.!.a duck egg that has a baby chick inside!.!.i won't eat this delicacy!.!.or any egg that has even blood in the yolk!.!.this is also a partly fertilized egg!.!.thus we have to check them!.!.
in the Philippines they don't even bother to wash the eggs at the market!.!.and my wife told them they should as she has been in the US for25 years not and finds this practice gross!.!.she does not eat anything that is someones pet eitherWww@FoodAQ@Com
