I'm assuming you are roasting a whole chicken, so I recommend 400 to 425 degrees!. Because chicken is lean, a lower temp will require longer cooking time and the chicken might be dry!. Make sure you pat the chicken dry with a paper towel to ensure crispy skin!. You can test when its done by pressing on it and if its firm but but still springs back, its done!. If you make small cut into it in the thigh area and juices run clear, its done!. Make sure to let it rest before carving!.Www@FoodAQ@Com

350 for one hour if the chicken is cut up!. Check at 45 minutes, by poking with a fork!. If the juice is clear then done, if not give it a few more minutes, then pull out and lest rest for 10 minutes!.!.!.

I use 350 as a default temperature for anything I can't remember the actual temp for!. I just watch it carefully!.Www@FoodAQ@Com
