No, some people add melted butter to the batter for a richer flavour but it's not essential!. To make pancakes;
1) Sieve 100g (4 oz) plain flour and a pinch of salt into a bowl!. Make a well in the flour and break in 1 egg!.
2) Using a wooden spoon or a whisk, gradually beat in 300mls (1/2 pint) milk!. The batter should be fairly runny, the same sort of consistency as single cream!. Leave it to stand for a couple of minutes!.
3) Pour about 1 teaspoon of cooking oil (vegetable oil or sunflower oil are best, a small knob of lard will do if you don't have oil) into a small frying pan (preferably a non-stick one)!. Heat the pan gently until the fat gets so hot that it starts to smoke (keep an eye on it because it can catch alight very easily)!.
4) Pour in a small amount of batter and swirl it around the pan so that it covers it in a thin layer (too much and you'll have stodgy thick pancakes)!. When the bottom of the pancake is cooked (brown speckles all over), use a spatula to turn it over and cook the other side (or toss it over if you're feeling brave)!.

no you don;t need butter to make pancakes but you do need either cooking spray or oil or margerine to cook them to keep them from sticking!. there is an add only water mix that is really good but usually if you are making them totally from scratch it usually calls for cooking oilWww@FoodAQ@Com

For the batter, you can use any type of plain oil!.
