How do you make certain sauces?!


Question: How do you make certain sauces!?
I'm a sauce guy and I like to use different types of sauces when I eat but I'm also poor as heck and can't afford to buy but a couple!. plus the stores don't have anything interesting!. so I've got a couple of questions!.

1!. what are Some recipes for different sauces and what are they good for!.

2!. how o you make lizard sauce!.

3!. what are some interesting sauces tat aren't anything that is common!. like stuff you'd hear of and have to ask what it is!.Www@FoodAQ@Com

CREAMY ALFREDO SAUCE
Yield: 1 Servings

3 tb Butter/margarine
1 c Light cream
1/3 c Grated parmesan cheese
1/8 ts Pepper
Tangy Orange Sauce

2 oranges; peeled -- segmented
1/2 cup orange juice
1 teaspoon ginger
1/4 cup maple syrup

Combine all the ingredients in a saucepan and bring to a simmer over medium-high heat!.

Cook for 1 minute and serve hot!. Good over vanilla Rice Dream and any kind of kebob


-Pinch ground nutmeg

In medium saucepan over medium low heat, melt butter!. Add cream;
cover and simmer 2 minutes!. Stir in cheese, pepper and nutmeg!. Serve
over hot cooked pasta!.


A Great Little Cheese Sauce

8 oz!. Velveeta, cubed
2 Tbs!. butter
1/4 cup flour
1/2 to 2/3 cups milk
1/2 tsp!. roasted garlic, minced
2 tsp!. chopped chives
1/4 tsp!. ground horseradish
Salt, to taste

On medium-low heat in a saucepan melt butter and add flour!. Whisk
flour so it will blend with butter!. Add milk slowly and stir
constantly until it is blended and mixture is smooth!. Add cubed
cheese, garlic, chives, horseradish, and blend with white sauce!.
Stir constantly until cheese is completely melted and sauce is
smooth!. It should have a medium-thick consistency!. If sauce is too
thick a little milk may be added!.

Notes: This sauce is great for topping fried mushrooms, baked
potatoes, vegetables, pasta or mixed in with ordinary mashed potatoes!.


Worcestershire Butter Sauce
1/2 c Butter Or Margarine
1 tb Parsley; Chopped
2 tb Lemon Juice
1 1/2 ts Worcestershire Sauce
1/8 ts Salt

Melt the butter in a small saucepan and then add the remaining ingredients!. Heat thoroughly and serve over fish or vegetables


BROWN SAUCE
Yield: 1 Servings

2 tb Butter
2 tb Flour
1/2 ts Salt
1/4 ts Pepper
1 cn Beef stock

In skillet melt butter!. Add flour, salt, pepper and beef stock!. Cook
15 minutes over very low heat or double boiler!. Consumme' can
substitute for beef stock!. Serve with beef dishes!.


VANILLA SAUCE
Yield: 14 Servings

2 c Nonfat Milk -- or skim
1 Egg Beaters!. 99% Egg
Substitute -- 1/4 C
3/4 c Sugar -- or 1/2 C + 3 pkg
Sweet 'N Low
1 ts Vanilla
ds Nutmeg
1 tb Flour -- or 2 tsp
Cornstarch

Boil milk and beat in sugar, flour, and Egg Beater that have been
mixed together!. Simmer until it thickens, stirring constantly!.
Remove from heat adding vanilla and nutmeg!.


White Sauce

1 tb Butter
1 c Milk
1/8 ts Pepper
1 tb Flour
1/4 ts Salt

Melt butter and add the flour and stir until blended!. Slowly add the milk and cook until mixture thickens, stirring constantly!. Add seasonings and cook 2 minutes longer!.



Green Pesto Sauce

4 cups fresh basil leaves -- (tightly packed)
1/2 cup olive oil
2 garlic cloves -- peeled and crushed
6 sprigs parsley leaves
salt -- to taste
freshly-ground black pepper -- to taste
1/4 cup pine nuts -- walnuts or almonds
1/2 cup freshly-grated parmesan or Romano cheese

Place the basil in a food blender (don't try this with dried basil; it won't work)!. Add the oil, garlic, parsley and salt and pepper!. Blend until all are chopped very fine!.

Add the nuts and chop a bit more!. Remove from the blender and stir in the grated cheese!. This recipe makes about 2 cups of sauce!.

Comments: This lovely green sauce comes from Genoa in northern Italy!. I can no longer think of running my kitchen without this condiment!. If you have some in your refrigerator you will begin to use it to bolster good vegetable soups, flavor garlic toast, add depth to salad dressings and, of course, to add to pasta!.

This recipe is for fresh sauce, but if you want to freeze basil for the wintertime simply chop the leaves in a food blender with enough peanut oil (not olive oil) just to make a paste!. Freeze in heavy plastic bags or cartons and use the paste to prepare this recipe during the winter!. You will not have to add as much olive oil because of the peanut oil you used to preserve the basil!.


South Carolina Mustard Sauce

3/4 cup prepared mustard
3/4 cup red wine vinegar
1 1/2 tablespoons margarine
2 teaspoons salt
1/4 teaspoon black pepper
1/2 teaspoon Tabasco sauce
1/2 tablespoon Worcestershire sauce
1/4 cup granulated sugar

Combine all ingredients in a medium saucepan!. Mix well!.

Simmer on low heat for 10-15 minutes, let stand at room temperature for one hour before serving!.



SOUR CREAM MUSHROOM SAUCE

1/2 lb!. fresh mushrooms, cut in half
1/4 c!. minced onion
2 tbsp!. butter
2 tbsp!. flour
1/2 c!. heavy cream
1/2 c!. dairy sour cream
1/2 tsp!. salt
1/4 tsp!. pepper

Cook mushrooms and onions lightly over heat in butter until tender!. Cover and cook 10 minutes!. Push mushrooms to the side and stir flour into butter!. Add cream, sour cream, and seasonings!. Heat slowly, almost constantly stirring, to boiling point!. Makes 1 1/2 cups!.Www@FoodAQ@Com

Mine is more of a dipping sauce, but my own invention!!
I love it with tortilla chips and!.or quesadillas!.

Salsa Ranch Dressing:
1/4 cup Ranch Dressing
1/4 cup salsa
2 Tbsp tabasco
