Question: Does anyone know how to make the Chinese green beans with the sauce on them, like you get at the Chin!. Buffet!?
They are the stir-fried ones with the brown sauce and sesame seeds!. I need to know what kind of sauce is on them, its not teriyaki, or regular stir-fry sauce!.Www@FoodAQ@Com

Wok Seared Green Beans w/Cantonese Sauce

The success of this recipe depends on having fairly small, uniformly sized beans!. Larger, tougher beans take longer to cook!.

2 Tablespoons toasted sesame oil
1 pound fresh green beans, washed, trimmed, and patted dry

4 cloves garlic, minced
? teaspoon salt
pinch crushed red pepper
sesami seeds

Heat oil in wok over high heat!. Add beans and stir fry until beans are well-seared, about 10 minutes!. It may help to let the beans sit for 10 seconds at a time, rather than continuously stir-frying!. Add garlic, salt, and crushed red pepper and sauce mixture!. Stir fry for 2 minutes until garlic is soft and sauce thickens!.Top with sesami seeds!. Serve immediately

1 lb fresh green beans!.
2 x green onions, chopped!.
2 x cloves of garlic, minced!.
6 x thin slices of fresh ginger!.
6 tbl of sesame oil!.
1 tbsp sugar!.
1/2 tsp salt!.
3 tbl soy sauce!.
1/4 cup water!.

Method:
Cook the green beans in boiling water(to cover), 3 to 4 minutes; drain and plunge into cold water to stop the cooking process!. Drain on paper towels!. Cook green onions, garlic and ginger in hot sesame oil in a skillet 1 minute, stirring constantly; add sugar, salt and soy sauce, and cook until sugar dissolves, stirring constantly!. Add the green beans and water, reduce heat to medium, and stir-fry for 3 minutes!. Serve immediately with sesami seeds topping
Cantonese Sauce
Ingredients:

3/4 cup beef broth
4 teaspoons oyster sauce
1 teaspoon dark soy sauce
1/2 teaspoon sugar
1 tablespoon cornstarch, dissolved in
2 tablespoons cold water

Sauce Prep:
Combine the ingredients, adding the cornstarch last!.Www@FoodAQ@Com
