Ok i got some very nice fresh salmon filets?!
and some fresh lemon and dill!. anyone know a good way to prepare this!. it's going to be my first time cooking fish!. i would like to know how they do it in the restaurant!. is it baked, brioled!?Www@FoodAQ@Com

mmm, sounds good! Salmon, like most fish is easy and quick to prepare!. The simplest way would probably be to place your fillets in a baking dish, put a pat of butter on each fillet, then sprinkle desired amount of dill, then I would salt and pepper and then squeeze fresh lemon right over it!. Pop them in the oven at 400 for about 10 min!. Check center for doneness!. Good luck!Www@FoodAQ@Com
Poach it if this is your first attempt at this type of fish!. It is relatively easy and you certainly do not want to over cook salmon!.
4 salmon fillets
2 cups water
1 cup dry white wine
1 tablespoon freshly squeezed lemon juice
1/2 teaspoon lemon zest
1 bay leaf
Sea salt
Freshly ground black pepper
In a sauté pan deep and wide enough for the salmon fillets, bring the water, wine, lemon juice, lemon zest, bay leaf, salt and pepper to a boil and boil for five minutes!. Add the salmon fillets, lower the heat and simmer the fish for approximately 6 to 8 minutes!. If the salmon is not completely covered by the poaching liquid, then turn the fish over once carefully in the pan during the simmering process!.
Remove the salmon from the pan to a wood cutting board, allow the excess liquids to drain and place the salmon fillets on serving plates!.
For a nice finishing touch top with a hollandaise or dill sauce!.Www@FoodAQ@Com

2 tbsp finely chopped fresh dill

I always grill my salmon, it doen't matter if you use charcoal or gas!. Take your fish and soak it in Lawry's marinade, you can get it at your local grocer, and they have 15 varieties, whatever one you like will do!. Then marinade your fish in it for a half hou!. When done marinading, put on grill, and brush remaining marinade on top!. Keep an eye on the fish cooking, I never time it I just eyeball it so I don't know how long it takes but its around 15 mins!. If you eyeball it, if you check to see if its done just use a fork to flake some of the meat, and if its light pink, its done!. This is a never fail recipie, and it packs alot of flavor into the fish!.Www@FoodAQ@Com
all the answers so far sound good---what i do is----brush the salmon with olive oil----place it in a glass baking dish----set the oven for about 350 degress--salt & pepper to taste, lil rosemary--some dill---for about 15 minutes--also coat with butter----i have dusted it with nutmeg----or dried bay leavesWww@FoodAQ@Com
When I get it at a restaurant, I like it blackened (Cajun style), which is quickly pan-fried!.!.!.!.!. When we make it at home (once a week), we BBQ it (no fish smell in the house:)!. Lightly brush olive oil on both sides, and sprinkle with garlic powder and lots of dried dillweed!. Grill 5-8 min on each side until done (white & flaky)!. Serve with this easy sauce: 1/4 c!. Here's a different way - cut it in 1 inch chunks and make a stir fry with stir fry vegetables!. Serve over rice with thick teriyaki sauce!. You can't fail (just don't overcook!.)Www@FoodAQ@Com
