Cherry Nut Granola
(15 servings) Printable Version
* 3 cups rolled oats
* 1 cup unsalted peanuts (salted if you want a salty snack)
* 1 cup plump dried cherries
* 1 cup coconut
* 1 cup dates
* 1/2 cup honey
* 1/2 cup sesame seeds
* 1/2 cup brown sugar
* 1/4 cup wheat germ
* 1/4 cup peanut oil
* 3 Tablespoons butter - melted
* 1 teaspoon vanilla
* 1/2 teaspoon cinnamon
* 1/2 teaspoon salt
Cut dates into small pieces and place in a medium bowl with dried cherries!. Set aside!.
Preheat oven to 300 degrees!.
In a large bowl, mix together the honey, brown sugar, peanut oil, butter, vanilla and cinnamon!. Add oats, peanuts, coconut, sesame seeds, and wheat germ and stir until all ingredients are coated!.
Prepare a large baking pan with parchement paper or a very light coating of cooking spray!. Pour mixture onto pan, spread evenly with spatuala and bake for 45 minutes or until golden brown -- stiring mix in the pan every 15 minutes!.
Remove from oven and immediately add dried fruit and salt!. Stir well!. Allow to cool before serving or storing!.
Apple Oats Cereal

* 4 cups applesauce
* 1 and 1/3 cups oat bran hot cereal - uncooked
* 1 cup quick or old-fashioned oats - uncooked
* 1 cup Unsweetened apple juice
* 2/3 cup raisins
* 1/4 cup almonds slivers
* 1 teaspoon cinnamon
In a large bowl, combine all ingredients!. Mix well!.
Transfer to smaller storage containers if desired!. Just make sure whatever container you put it in is covered!.
Refrigerate overnight!.
Serve cold with milk and a sprinkling of sugar!.
Stores well in refrigerator for up to a week!.
Raisin Nut Muesli

* 4 and 1/2 cups rolled oats - quick or old-fashioned
* 1/2 cup wheat germ - toasted
* 1/2 cup wheat bran
* 1/2 cup oat bran
* 1 cup raisins
* 1/2 cup coarsely chopped walnuts (or pecans)
* 1/4 cup packed brown sugar
* 1/4 cup raw sunflower seeds
Mix all of the ingredients together in a large mixing bowl!. Transfer to an airtight container for storage!.
To make individual servings, just transfer desired amount to a bowl and add milk!. For a delicious hot cereal, microwave for 2 minutes - stirring once after the first minute!. I know that many people also like to mix muesli with yogurt!.
One last serving suggestion: If you toast a serving of this muesli in a skillet for a minute or two, it gives it a great earthy, nuttier flavor!. And when you add cold milk, the difference in the temperatures is exciting to the mouth!.

1!. Start by preheating the oven to 275 degrees F or 135 degrees C!.
2!. Take a large bowl and mix oats, wheat germ, and wheat bran!.
3!. Get another bowl!. This time get a medium sized one!. Blend brown sugar, vegetable oil, honey, and water!.
4!. Mix in vanilla extract, cinnamon, nutmeg, and salt!. Mix it in with the contents already in the medium bowl!.

Believe it or not, one of the first cereals in the world was popcorn!. Corn flakes derived from them, as they could not find out how to package pre-popped corn the way they would do with conventional cereals these days!.
