Pan searing is a method of keeping the juices inside the meat rather than cooking them out!. It is a form of "sealing" the meat!.

You get your pan hot hot on a high heat!. With just enough oil to keep the meat from sticking to the pan, you put the meat in and you turn it over almost immediately, maybe 20-30 seconds on both sides!. Be careful of spatter!.

Turn the fire down and continue cooking on lower heat until the meat is cooked to taste!.

In the olden days, if someone had a bad injury and was at risk of bleeding to death, say they lost an arm!.!.!. it was common to sear the stub with fire to stop the flow of "juices"!.

While today we consider that to be barbaric, it's still a very effective way to cook your steak!.Www@FoodAQ@Com

Pan searing is just to seer the outside of the meat!. Get your pan as hot as possible, then drop your steak on it for 10-15 seconds, pull if off and let the pan heat back up; then do the same on the other side! If you have a really thick steak, you may want to turn the steak on its side and roll it until the side is browned as well (being a tenderloin you will need to do this)! You will still need to grill or bake the steak to cook the inside! You just sealed in all the good juices!Www@FoodAQ@Com

coat a hot HOT skillet with olive oil (make sure u cant old you hand over the skillet for more that like 3 seconds) put the steak in and let it cook dont turn it til its brown and crusty turn it over then cook the other side!. Remember not to cut into your steak for at least 5 mins to make sure u seal in the juices! ( I know it will be tough!)Www@FoodAQ@Com
