Answers:
egg yolk cookies

Ingredients
1 cup butter (or shortening for cookies that won't spread quite as much)
1 1/2 cups sugar
6 egg yolk (or 3 whole eggs)
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon vanilla extract
1/2 teaspoon lemon extract
1/2 teaspoon orange extract
Directions
1Cream butter and sugar until fluffy!.
2Separately, beat egg yolks and add extracts!.
3Add beaten egg yolk mixture to creamed butter and sugar!.
4Blend well!.
5In a separate bowl, whisk together dry ingredients (flour, baking soda and cream of tartar)!.
6Add dry ingredients to creamed butter, sugar and egg mixture, mixing until well blended!.
7Form into balls about the size of a walnut!.
8Roll balls in sugar, place on greased cookie sheet or parchment lined cookie sheet, and slightly flatten!.
9Bake at 350 degrees F for 8 to 10 minutes, depending on desired softness/crispness!.Www@FoodAQ@Com

I would also make an omelette, but other uses are given on the gourmet sleuth webpage mentioned below!.I have used 1 yolk plus 1 tablespoon of water to replace one whole egg of the two in a cake!.The result will be more yellow than usual, but is Ok!.I can't find the source for this!.Www@FoodAQ@Com

Make another dessert!
Proper tiramisu has egg yolks in the creamy bit!. I think you cream the egg yolks with sugar over a pan of hot water, add mascapone and a bit of creme fraiche!. Layer that with coffee and rum (tia maria is great too) soaked sponges and chill it for a few hours, if you can wait that long!
