yum! I made these the other night!. You pan-fry or broil them and serve on a bun with lettuce, tomato, onion, or just by themselves with this sauce: 1/4 c!. EACH Dijon mustard & sour cream, with 2 TB!. dried dillweed

CRAB CAKES
1-1/8 c!. crushed saltine crackers (I actually used dry bread crumbs and Panko, mixed)
1 c!. mayonnaise
1 tsp!. prepared brown mustard (I used Creole)
1/4 c!. chopped onion
1 stalk chopped celery
1 tsp!. Old Bay seasoning (I used dill, thyme, and file powder)
1 lb!. fresh crabmeat (actually 2-3 cans is ok too) - do NOT use imitation though
Mix together all ingredients and form into 4-6 patties!. I lightly coated mine with more Panko then!. Place on greased baking sheet and broil about 8-10 min on each side; or pan fry 8-10 min!. on each side!.!.!.!.!.!.!.
