SHRIMP SCAMPI
serves 2
Ingredients:
1/2 cup melted butter
2 cloves garlic, chopped (or to taste)
salt, pepper, dill weed to taste
2 teaspoons flour
chopped onion OR green onion OR chives to taste
20 large shrimp (can use the pre-cooked, frozen ones)
red wine vinegar to taste
good quality sherry to taste!.
Instructions:
Heat oven to 450* Melt butter in Microwave, add salt, pepper and dillweed!. Place thawed shrimp in individual oven proof dishes, sprinkle with flour, then garlic and onions, pour butter mixture over all!. Bake for 5-6 minutes, remove!.!.!. sprinkle vinegar and sherry over top, stir gently!. It will thicken slightly!. Bake another 5-6 minutes, and serve immediately with chunks of crusty bread for dunking in the sauce, and a salad!.
TWICED BAKED POTATOES
serves 2
Ingredients:
2 med!. baking Potatoes
2 Tbs!. butter or oleo softened
1 Tbs!. milk
1/4 tsp!. salt
1 3 oz!. pkg!. cream cheese cubed
2 Tbs!. sour cream
Instructions:
Wash, pierce and bake potatoes @375 for and hour or until tender!. Cool!. Cut a thin slice off the top of each potato!. Scoop out the pulp and place in mixing bowl!. Add butter, milk and salt; beat until fluffy!. Beat in cream cheese and sour cream!. Spoon into potato shells!. Sprinkle with paprika!. Place on baking sheet and bake, uncovered, @350 for 20 -25 min or until thoroughly heated and tops are browned!. Can be doubled!.
STUFFED PEACHES
serves 4 - 6
Ingredients:
2 -36 freestone peaches, halved and pitted
4 - 6 amaretti cookies, crumbled
5 teaspoons blanched almonds, finely chopped
5 teaspoons sugar
1 tsp unsweetened cocoa powder
1/4 cup Moscato or other sweet white wine
1 - 2 Tbs butter
Instructions:
Scoop out a little of the flesh from the center of the peach to make a larger hole!.? Chop the removed peach flesh and combine with the remaining ingredients except the butter!.? Place the peaches in a buttered baking dish and fill with the mixture!.? Dot with butter and bake in a preheated 400F for 20 to 25 minutes!.? Serve warm or at room temperature!.?Www@FoodAQ@Com

Salmon and Tilapia are always good favorites, especially mine, lol!. I'm sure you can look up some easy recipes for grilling fish or whatever your taste is!. For sides, you can have mozzarella sticks or mashed potatoes!. A good chicken caesar salad is great too! Of course you can have shrimp cocktail and sushi, or even some calamari!.

I think a great idea for people who enjoy seafood is this delicious Crab Alfredo recipe!. It's similar to the one served at Red Lobster and is pretty simple and so delicious!. My fiance and I enjoy it!.
Ingredients
8 ounces fettuccine
4 tablespoons butter
4 tablespoons flour
2 cups half-and-half
1/2 cup grated Parmesan cheese (or more)
salt & pepper
1 teaspoon cayenne pepper
6 (8 ounce) cooked snow crabmeat, cut into chunks
Directions
1 Cook fettuccine according to package!.(should say boil)
2 Melt the butter in a saucepan!. Stir in the flour and cook briefly until it looks sandy!.
3Do Not let it color!.
4Whisk in the half-and-half and stir until the mixture forms a thick sauce!.
5Stir in the cheese and season to taste!.
6Simmer a few minutes to blend the flavors and stir in the crab meat!. Cook just until the crab meat is heated through!.
7 Serve over cooked fettuccine with additional parmesan cheese!.
As for a side, you can do shrimp with a cocktail sauce, you can purchase these at your local grocery store too!. Or, you can do pan-seared crab cakes!. -Yum-!.

1 small can mandarin oranges, drained
carmelized sliced almonds **
Balsamic Vignarette or Girard's Champagne dressing
Toss all together and serve !.!.!.!.!. ** carmelize the sliced almonds by stirring them in a dry frying pan with some sugar, until the sugar melts and coats the nuts
BROILED CRAB SANDWICHES
4 English muffins, split
12 oz!. fresh crabmeat
2 stalks celery, finely chopped
2-4 green onions, finely chopped
1 TB!. mayonnaise
4-8 oz!. chopped mushrooms (canned or fresh)
8 slices bacon, fried
8 slices real cheddar cheese
Toast muffins on one side!. Spread with mixture of crab, celery, onions, mayonnaise & mushrooms!. Cover with bacon and cheese!. Broil until cheese is bubbly!. Sandwiches may be fixed ahead, refrigerated and broiled just before serving!. Let stand at room temp at least 30 min!. before broiling then!.!.!.!. serves 4
