Can you help an inexperienced cook with quick dinner idea's?!
I'm a single dad!. By the time I get the kids rounded up and home it's only an hour or so till their bed time!. I need some ideas for quick easy meals or link's to some!. We have done all the Hamburger Helper and meal in a bag stuff!. I have a crock pot but I've never used one before!.Www@FoodAQ@Com

COLA CHICKEN

4 skinless, boneless chicken breasts
1 cup catsup
1 12oz!. can cola (pepsi, coke, etc!.)
Put chicken in a non-stick pan!.
Mix together catsup and cola, pour over chicken!.
Bring to a boil!. Cover, reduce heat and cook 45 minutes!.
(turning chicken a few times, while cooking!.!.!.to prevent from sticking to pan)
Uncover, turn up the heat and continue to cook until the sauce
becomes thick and adheres to the chicken!.
It turns into the most incredible BBQ sauce!. Yummmm!
You can double the recipe and use more pieces of
chicken!.!.!.!.wings!.!.!.would be ideal!.!.!.add some hot sauce!.!.!.!.presto "Hot Wings"!
I have used Ribs, just as good!.
I tried this recipe with 'meatballs'!.!.!.!.was equally
as good!.!.!.served over rice!.
I found another variation!.!.!.!.!.omit the catsup and add a small jar of Salsa (any variety)!.
I have tried using Salsa (omitting the catsup!.!.!.!.not)!.
You'd think a recipe with only '3' ingredients couldn't be messed up!.!.!.!.wouldn't you!?!?
Well!.!.!.while I was preparing to fix the 'Cola Chicken' recipe
using Salsa!.!.!.!.!.I was also trying to carry on a conversation with my
husband!.!.!.(just proves!.!.!.I can't do two things at once)!.!.!.!.mixed Salsa & Catsup (before I realized I was supposed to leave out the catsup) & Cola!.!.!.!.!.!.!.!.still turned out really tasty (to me)!.!.!.might be a little sweeter than some of you like!.
I fixed chicken wings, (using the above recipe)
but!.!.!.I added the spices from a MILD (I don't care for "HOT") Buffalo Wings packet!.!.!.(the kind you get to bake in the oven)!.!.!.!.!.I thought it was really good!.!.!.!.!.(but you/I can't find a 'bad' way to fix chicken)!.
Finally!.!.!.!.!! I fixed the 'SALSA' chicken!.!.!.!.!.!.that's good , too!.
Another (bright)idea!.!.!.!.!.I thought of trying!.!.!.!.!.!.replace the
catsup with a bottle of Shrimp Cocktail Sauce!.!.!.and add a bag of (pop corn) shrimp!.!.!.!.!.!
Fixed the shrimp with cocktail sauce!.!.!.!.!.!.eh!.!.!.wasn't all that
great!.!.!.was OK!.!.!.probably won't be fixing it again!.
also tried beef stew cuts!.!.!.!.!.!.that was pretty good!.!.!.!.!.I can see
myself making this again!.
Served both over rice!.!.!.!.!.think the stew cuts would have been just as
good over noodles!.
Try little cocktail wieners/sausages…for appetizers!.
CRUNCHY ONION CHICKEN
1 1/3 cups French’s Original French Fried Onions
4 boneless skinless chicken breast halves
1 egg, beaten
LIGHTLY CRUSH:
Onions in a plastic bag!.
DIP:
Chicken in egg
COVER:
With onion crumbs, press firmly to adhere to chicken!.
BAKE:
Preheat oven to 400 degrees!.
Place chicken on lightly greased baking pan!.
Sprinkle with additional onion crumbs, if desired!.
Bake for 20 minutes or until no longer pink in center!.
Mushroom Chicken
4 boneless/skinless chicken breast (or any pieces you like)
1 can cream of mushroom soup!.
1 can water
Place chicken in crock pot (or sauce pan for stove top cooking)
mix soup & 1 can of water together
pour over chicken
cook on medium heat until boiling then reduce heat and cook until chicken is really tender & falling apart!.
Serve over noodles or rice or dressing!.!.!.!.or!?!?!?
CHILLI DOG CASSEROLE
1 pkg!. (8) hot dog buns
1 pkg!. (8) hot dogs (use more if you like)
1 can Chilli (15 oz!. without beans, use more if you want)
1 small onion (chopped)
2 cups shredded cheese
mustard
DIRECTIONS: Pre-heat oven 350 degrees
In a 9" x 13" baking pan, break up hot dog buns (bite size) and spread in pan!.
Cut up hot dogs (about 1/2" size) spread over buns!.
Spoon/spred chilli over hot dog/buns!.
Sprinkle onions over all!.
Squirt mustard over entire mixture (don't spread!.!.!.just make a few lines both ways across mixture)
Cover with shredded cheese!.
Bake until cheese is melted and bubbly!.
(Hint: If using extra hot dogs & chilli, don't add extra buns!.)
"Canned Soup"!.

Whatever cans of veggies I have, that I like, in cabinet it goes in the pot!.!.!.!.!.along with all the juices in the cans!.
Cook on stove top or Crock pot!.

Ingredients:
3/4 lb lean ground beef
1 jar Heinz HomeStyle Savory Beef Gravy (12 oz Jar)
1 can mushrooms, drained (7 oz can)
1/2 cup sour cream
4-6 cups hot cooked noodles
salt & pepper, to taste
Instructions:
In a medium skillet, cook ground beef over medium heat until browned and thoroughly cooked!. Carefully drain liquids and return to stovetop!. Stir in Gravy and mushrooms, and bring to a simmer, stirring occasionally!. Remove from heat and stir in sour cream, until thoroughly combined!. Add salt and pepper, to taste, and serve immediately over hot noodles!.
Preparation Time: 1-15 minutes
Cook Time: 25+ minutes
"Corny Beanie Weenies!."
(from a country preacher in Mississippi…wife & 2 teenage sons)
Mix one can of good baked beans
We use a good sized can of beans (14-16 ounces, I think) and
get a kind that we like (maybe with brown sugar, onion, and bacon)!.
There are several kinds of good baked beans!.
and a package of Oscar Meier Weiners (all sliced up)!.
with a can of whole kernel corn (drained)
Any way, heat up these three ingredients, and serve with brown bread
(maybe toasted !?) and a glass of milk!.
It doesn't get any easier than this, and is suprisingly good!
P!.S…!.!.Might put ingredients in a casserole dish and top with corn muffin mix!.
Substitute a pound of cooked ground beef……rename to…!?!?
POT ROAST
Your choice of beef (to fit crock-pot)
1 pkg!. dry Ranch dressing mix
1 pkg!. dry Italian dressing mix
1 pkg!. dry Brown Gravy mix
1 cup water
Put beef in pot!.
Mix together all the dry mixes…!.then add water …pour over meat and cover & cook on high 4-6 hours!.
Until meat is tender!.
The first time I mad it I didn’t have the Italian Dressing mix…!.so I added a pkg!. of Onion Soup Mix…!.I have to say I liked that better!.
If you use more water you might want to add more Brown Gravy mix…!.to make a thicker sauce!. Was gonna add
potatoes and carrots…but never got around to it!.
HASH BROWN CASSEROLE
2 lbs!. frozen shredded hash brown potatoes (thawed)
1 bunch green onions, chopped
sweet pepper chopped (red – green – yellow – orange – or a mixture of all)
1 lb!. Sausage, cooked until pink disappears, crumbled
1 cup ham cubes
4 slices crisp bacon, crumbled
1 small can sliced mushrooms
1 small can sliced black olives
2 – 8oz!. packages of shredded cheese
? cup milk
12 eggs beaten
Tabasco (optional)
sour cream & salsa (optional)
Grease a 9 x 13 baking pan, wipe excess with paper towel!.
Spread potatoes on bottom (cand be lightly browned in a skillet first if desired)
Sprinkle sausage over potatoes…then
Peppers…
Mushrooms…
Ham!.!.
Onions (reserve about ? cup)
Mix eggs & milk together……!.I added about 2 TBLS!. Tabasco…more to your taste… pour slowly over all!.
Cover with shredded cheese…!.then sprinkle over all

Cover and refrigerate overnight!.
Uncover and bake at 375 degrees for 35 – 45 minutes…until browned and cheese is melted!.

INGREDIENTS:

24 oz!. can Pork & Beans (drained)
1/2 cup white sugar
1/2 cup dark brown sugar
1/4 cup Catsup
2 TBLS!. Molasses

Mix Thoroughly !
Cook in a crock pot until!.!.!.hot!.!.!.hot!.!.!.hot!
MARINATED VEGGIE SALAD
1 lb!. can French style green beans
1 lb!. can small peas
1 lb!. can white corn
1 - 4oz!. jar pimento (chopped)
1 cup shopped onion
1 cup chopped celery
1 cup chopped green pepper
1 cup sugar (I used artificial sweetener)
2/3 cup vinegar (I used red wine vinegar)
1/2 cup cooking oil
1 tsp!. salt
1 tsp!. pepper
1!.)Pour green beans, peas, corn & pimento in a colander to drain over a
large bowl!. Discard 1 1/2 cups of liquid!.
2!.)Put veggies in a large bowl and fold in onions, celery and green
peppers!.
3!.)Mix together thoroughly the remaining ingredients and toss with
veggies!.
4!.)Cover and let sit over night in refrigerator!. (The longer it marinates the better!.)

Combine:
2 sticks butter
1 2/3 cup sugar
Beat in:
5 eggs (1 at a time)
Add:
2 cups sifted flour
1 teaspoon vanilla
1 teaspoon rum extract
Mix thoroughly and bake 1 hour at 325 degrees!.
E-Z Candy
(All recipes are mixed the same!.)
Melt ingredients, seperately in microwave until runny!.
Mix together and pour into serving dish!.
Chill until firm, cut & serve!.
Chocolate Fudge:
16 oz!. container of Fudge Frosting
1 bag of Chocolate Chips (any flavor you like)
Peanut Butter Fudge #1:
1 small jar Peanut Butter (18 oz!.)
2 bags of Peanut Butter Chips
Peanut Butter Fudge #2:
1 small jar Peanut Butter (18oz!.)
16 oz!. container of White Frosting
Marshmallow Nougat:
1 small jr Marshmallow Creme
1 bag White Chocolate Chips
1 tsp!. Almond Flavoring

1 Polish sausage ring
Steam vegetables over gently boiling water until tender or nearly so!. Place Polish sausage ring on top of vegetables and steam until sausage is heated through, 5-10 minutes!. Remove onto platter and serve hot!. Add a cole slaw salad and Jello dessert for a satisfying meal!.

Put the noodles in boiling water and cook them!. After they are finished, add 1/2 stick of butter!. After it is melted, add drained chicken, mushrooms and peas!. Then add the two cans of soup with 1/2 cup of milk!.
Bake in 350 degree oven for 30 minutes!. Keep covered while baking!.

Bake in 350 degree oven for 30 minutes!. Keep covered while baking!.

Add chopped onions and/or garlic if you like them!. Pour in a jar of spaghetti sauce (there are so many to choose from so pick the kind you like), put in some oregano (optional) and season to taste!. Simmer the sauce while pasta cooks al dente!. When pasta has been drained, pour on sauce!. You can put parmesan cheese on it!. Side of cucumber, roma tomatoes, green peppers, red onion salad in red wine vinegar & olive oil dressing!. Italian bread (garlic or not)!.

2 cloves garlic, crushed

1 medium onion, cut into strips
1 medium bell pepper, cut into strips
Cut steak into serving-size pieces!. Season, to taste, with garlic powder and salt and pepper!. Dust meat with flour!. In heavy skillet, brown both sides of meat in vegetable oil!. Transfer to Dutch oven!. Combine garlic, tomatoes, onion, bell pepper, and 1 tomato-can measure of water!. Pour over steak and simmer over low heat until meat is tender, about 1? hours adding water, if necessary to keep meat partially covered!. Season, to taste, with additional salt and pepper!.
Hint: Cook this in a slow-cooker on low for a most fabulous dinner!. Low heat on a slow cooker is about 200 degrees F and high heat on a slow cooker is about 300 oF!.

2!. Trim excess fat from pork chops!. Place chops on unheated rack of broiler pan!. Broil 4 to 5 inches from heat for 8 minutes!.

Ingredients:
16 oz Linguine or Thin Spaghetti
? stick of butter
1 med!. onion diced
1 bell pepper diced finely (opt)

3 TBS of chopped Parsley
1 TBS of Oregano
? tsp!. of salt
1 tsp!. of black pepper
3 10 oz Cans of Chunk Chicken
1 10 oz cans of Chicken Broth
1 10 oz can Cream of Mushroom Soup
1 10 oz can Cream of Chicken Soup
1 4 oz can of sliced black olives drained
1 4 oz can sliced mushrooms –drained or ? lb sliced fresh mushrooms
12 oz of shredded Mozzarella Cheese
2 cup of grated Parmesan Cheese
-divided in half
Instructions:
Preheat oven to 325 degrees!.
Cook pasta according to directions leaving it al dente!.
While spaghetti is cooking melt butter in a large pot, adding onions and green peppers, sauté for about 5 minutes!. Add garlic and spices continue to sauté for about 5 more minutes!. Cook on low heat for about 5 minutes!. Add chicken broth stir well!. Add canned soup and stir!. Turn off heat under pot!. Add chicken (do not drain), black olives and mushrooms (drain these) and continue to stir!. Add mozzarella cheese and stir!. Add ? of the Parmesan cheese!. When well blended add cooked pasta and fold until all pasta is coated and chicken is not clumped together!.
Pour into 1 - 11 x 15 pan or 3 - 8x8 pans (spray pan with Pam or similar product for easy clean up)!. Top with remain and then sprinkle the remaining half of Parmesan cheese over the top of the entire casserole!. Bake for about 30 or 45 minutes until all the cheese is melted and the casserole is heated through!.
This can also be heated for about 20 minutes at 70% power in the microwave!.
Serve with a side salad and crusty Italian bread!.
This can be made ahead and frozen up to two months!. If frozen more cooking time may be necessary!. Cook until bubbly!.
CHEESE ENCHILADAS
Ingredients:
4 cans Cream of Chicken Soup
16 oz of sour cream
1-4oz can chopped green chilies
1 medium onion finely chopped
1 pound cooked shredded chicken (opt)

20 - 10” white flour tortillas
1? pounds of grated Cheddar Cheese
1? pounds of grated Monetary Jack
Chili Sauce without beans (opt)
Instructions:
Preheat oven to 350 degrees

Drain off excess grease

1 pound of ground beef
1 small onion chopped
1 tsp of garlic
1 can of chopped tomatoes
1 can tomato paste
1 can of water
3 slices of American cheese
bread crumbs or crumbled crackers -- optional
Salt and pepper to taste
Instructions:
Preheat oven to 350 degrees
Cook macroni according to package directions!. Drain and set aside!.
While the macroni is cooking brown ground beef with onion and garlic
Drain off excess grease
Add chopped tomatoes, tomato paste, water, salt and pepper simmer for about 15 minutes!. Mix tomato mixture with the Macroni in an oven proof container!.
Add cheese and bread crumbs to the top!. Bake for about 30 minutes until heated through!. (If in a hurry just mix on top of the stove, stirring to keep the macroni from sticking!.)

1-1/2 pints Sour Cream
1 pkg of stuffing (I use Stove Top Chicken Flavored)

Instructions:
Boil the squash and onions together with salt until tender in water to
cover!. (Approx 10 minutes)
While vegetables are boiling, mix together the soup and sour cream!.
Drain the vegetables and gently fold them into the mixture!.
Spread it into a 9x13 pan!.
Melt the stick of butter in a medium bowl and blend it with the stuffing!.
Top the squash mixture with the stuffing and bake at 375oF for 45 minutes or
until top is golden!.
2-4-6-8-CAKE
Ingredients:
2 large eggs
4 oz margarine/butter
6 oz sugar
8 oz self-raising flour
up to 1 cup water or milk!.
Variations:
Chocolate cake – add about 2 TBS of bitter cocoa with the flour!.
Coffee cake - dissolve 2 tsp of instant coffee into a small amount of hot water and add to the rest of the water, or substitute a cup of strong cold coffee for the water
The variations are endless and are only limited by imagination!. The cake comes out moist and delicious and can be served dusted with icing sugar or with any icing you like!.

Sift flour and add a tablespoonful at a time so that it can mix in properly, add water or milk as needed to make the batter wet enough, you usually need to add the whole cup!. Put in a 8x8 baking pan and bake in a moderate oven for 45 min or until a toothpick inserted comes out clean!.
HONEY BUN CAKE
Ingredients:
1 box yellow cake mix

? cup oil
8 oz!. sour cream
? cup sugar
1 cup brown sugar
4 teaspoons cinnamon
1 cup raisins
? cup powdered sugar
6 Tablespoons melted butter
? teaspoon vanilla
Milk to thin as needed
Instructions:
Pre-heat oven to 300
Grease a 9x13 pan
Mix first 5 ingredients and pour into greased 9x13 pan
Mix Together the next 3 ingredients!. Sprinkle over top of cake & swirl mixture with a knife!.
Bake at 300 for 1 hour or longer as needed!.

A great idea that used to help me when we were working all hours and I didn't have much time to cook was that on Sundays (or which ever day I had off) I would cook up a bunch of meals and freeze them so that all I had to do was reheat or microwave them, and we were good to go!.
Here are a couple of quick and easy favorites I was raised on and so were my kids!.

CHICKEN TETRAZZINI
Ingredients:
16 oz Linguine or Thin Spaghetti
? stick of butter
1 med!. onion diced
1 bell pepper diced finely (opt)
3 tsp!. of Chopped Garlic
3 TBS of chopped Parsley
1 TBS of Oregano
? tsp!. of salt
1 tsp!. of black pepper
3 10 oz Cans of Chunk Chicken
1 10 oz cans of Chicken Broth
1 10 oz can Cream of Mushroom Soup
1 10 oz can Cream of Chicken Soup
1 4 oz can of sliced black olives drained
1 4 oz can sliced mushrooms –drained or ? lb sliced fresh mushrooms
12 oz of shredded Mozzarella Cheese
2 cup of grated Parmesan Cheese
-divided in half
Instructions:
Preheat oven to 325 degrees!.
Cook pasta according to directions leaving it al dente!.
While spaghetti is cooking melt butter in a large pot, adding onions and green peppers, sauté for about 5 minutes!. Add garlic and spices continue to sauté for about 5 more minutes!. Cook on low heat for about 5 minutes!. Add chicken broth stir well!. Add canned soup and stir!. Turn off heat under pot!. Add chicken (do not drain), black olives and mushrooms (drain these) and continue to stir!. Add mozzarella cheese and stir!. Add ? of the Parmesan cheese!. When well blended add cooked pasta and fold until all pasta is coated and chicken is not clumped together!.
Pour into 1 - 11 x 15 pan or 3 - 8x8 pans (spray pan with Pam or similar product for easy clean up)!. Top with remain and then sprinkle the remaining half of Parmesan cheese over the top of the entire casserole!. Bake for about 30 or 45 minutes until all the cheese is melted and the casserole is heated through!.
This can also be heated for about 20 minutes at 70% power in the microwave!.
Serve with a side salad and crusty Italian bread!.
This can be made ahead and frozen up to two months!. If frozen more cooking time may be necessary!. Cook until bubbly!.
CHEESE ENCHILADAS
Ingredients:
4 cans Cream of Chicken Soup
16 oz of sour cream
1-4oz can chopped green chilies
1 medium onion finely chopped
1 pound cooked shredded chicken (opt)
(or 2 cans – break up with a fork)
20 - 10” white flour tortillas
1? pounds of grated Cheddar Cheese
1? pounds of grated Monetary Jack
Chili Sauce without beans (opt)
Instructions:
Preheat oven to 350 degrees
Spray a large pan 12 X 17 (or 2 smaller pans) with Pam or other similar vegetable coating!.
In a large bowl mix the first 4 ingredients until well blended!. Then add chicken if wanted!.
In a separate large bowl mix together the cheeses!.

I raised my daughter alone so I empathize with you, thank goodness for my family where I learned to cook young!. Here's the first recipe I ever learned at the tender age of 12!. I hope you try it and your family enjoys it!. This takes about ten minutes to prepare and twenty minutes to cook!. First decide if you like mashed potatoes with meatballs or egg noodles, if you choose potatoes, start peeling, dicing and put them in the water to boil!. Otherwise, we are on to the meatballs: one hefty pound of ground beef will feed a family of five unless they are all boys!. LOL!. You need one to one and a half pounds of ground beef, a small onion or half of a large one, garlic salt or powder, an egg, one slice of bread or 1/3 cup of bread crumbs, salt and pepper, a can of cream of mushroom soup, one can of milk!. You can also use 1 pound of beef and 1 pound of ground pork mixed together instead!. Put the meat in a medium sized bowl, dice the onion and add to meat, add the garlic seasoning, a little salt, pepper to taste, (you may want to add more after it has all cooked in the skillet for a while), mix together, turn on the burner to medium to medium high, form meat mixture into balls, the smaller they are the faster they cook so ping pong ball size is actually too large!. While they are in the skillet, mix the soup and milk together so that it is set up!. If you chose egg noodles, this is the time to get the water ready and on the stove to boil, turn the burner on!. Keep an eye on the meatballs, turn them before they burn and once they are fully cooked, spoon out the excess grease, now you can add the mushroom soup and milk, stir the bottom and sides really well with a flat spatula!. Turn the burner down to low, cover!. Now if you made mashed potatoes, let's mash them, but first, get the frozen veggies in the microwave, canned can be put on the stove (time to turn the burner on to med high) or miked!. Drain the potatoes and put them right back in the hot pan and on the burner you took them off!. Add the milk and butter, let them get hot and melted on the burner, it's off right!? Now mash the potatoes!. The veggies should be done now and the meatballs are ready to stir again!. Scrape the bottom really well again!. If you made potatoes, it took you a little longer than noodles, but this is a life saver for time crunchers!. This is my Dad's recipe, he was a police officer who was on shift work for 30 years while my Mom was a shop manager!. They both worked hard to put meals on the table unless my Dad worked days, then it was up to me to get supper ready for my Dad who had to go back to work and my Mom who was coming home for supper at 5:30 on the dot!. It couldn't be late, but he could, know what I mean!? My sisters were grown and gone, it was just us three!. As a 12 year old I wasn't always completely responsible, or I had after school things my folks would forget about, so once in a while I got home at 5 and had to have things ready in 30 minutes, if a 12 year old can fix this in 30 minutes potatoes and all, you can!.
