I am making a victoria sponge christening cake. Tin 12" diam. What gas regulo & for how long do you suggest?!
If I cook a big 12" sponge cake like this on gas regulo 5 as usual, I am afraid it might be soggy in the middle and burnt on the outside!. If I cook it on a low regulo for a long time, I am afraid it just will not rise!.

I think it will be okay!. Bake it as you normally would!. I have made large wedding cakes before and I have found they are okay up to 14"!. A 12" cake baked at 325F for 75-85 min should be about right!. But if you are concerned, start the oven temp as you normally would and turn it down part way through cooking!.
Another option that I use for very large cakes is to place a small, maybe 3"or 4" cake pan in the centre of your 12" pan!. Then pour the cake batter around the small pan so your cake will bake in a donut shape!. Pour the rest of the batter into another small pan, the same size as the one you have used in the centre of your 12" pan!. Bake both cakes and once they are baked and cooled, unmold them and put the small cake into the centre of the large cake!.
It works like a charm!
