BBQ Late Mother's Day Dinner Ideas Please?!


Question: BBQ Late Mother's Day Dinner Ideas Please!?
My fiance and I are doing Mother's Day today because we couldn't get everyone together last week!.
It will be my fiance and I, my mom/dad/brother and my fiance's mother!.
My mother and I are vegetarians and my grandma is allergic to cheese!.
If this was inside I could think of a million things to do, but I'm not sure how to do something fabulous for an outdoor setting!.

I was thinking:
BBQ Ribs
Stuffed Grilled Zucchini
Grilled Corn on the Cob
Rolls
Rissoto

Does that sound good or does anyone have any better ideas!?Www@FoodAQ@Com

We did ribs last night with friends and some were vegetarian- we just made hearty sides- a really good cous cous salad and potato salad!. The cous cous salad was a fluke- I normally make it with rice, I refrigerated it and it got mushy and I did not have any more, so I used cous cous and ALL the vegetarians loved it, so I will give you the recipe!.

6 cups cooked cous cous- cooked with water according to package directions!.
1 cup very thick salsa ( if you have or use a runny brand, drain in a strainer to make it as thick sa possible- ) and as hot as you like it
2 cans black beans, rinsed and drained
2 cans whole kernal corn, drained
1 cup mayo
1 cup chopped cilantro

Mix all ingredients and chill for at least an hour!.Www@FoodAQ@Com

How about a Fruit Salad too!? Hollow out half a watermelon, and then refill it with the cubed melon, strawberries, pineapple, and whatever other fruit you like !.!.!.!.

And a green salad (or spinach salad), with choice of several dressings !.!.!.!.!.!.

This would give you, your mom & grandma a choice of a couple of other things too!.!.!.!.!.Www@FoodAQ@Com
