How do you make a chocolate cake,, properly?!


Question: How do you make a chocolate cake,, properly!?
Alright,, on Friday i made a chocolate cake!.

The mix was fine, and it smelt great when cooking but was flat when it came out (and yes, i'm sure it was done, it tasted fine when eaten too) and i can't tell why!.

Here's what i did:

? Caster sugar + Stork (butter) in bowl, hand beat
? Add eggs, each time beating the mix
? Add the S!.R!. Flour (which i noticed was out of date this month and had been open for a while) and beat!.
? Sieve the cocoa in and beat again

Made sure the mix was smooth and divided it into the cake tins and put them in the pre-heated oven,, 200C for 20-30 min!.

So there you go,, they came out a while later,, not much taller than the mix that went in!.

Why didn't they rise!?

Was it the Self raising flour that was pretty much out of date,, or did i need to beat it with an electric mixer,, not a wooden spoon and my arm power!?

i would guess the self rising flour was too tired to rise!. (expired) other than that as long as you followed the recipe, it should have been ok!. after all, in the days before electric mixers, cakes would rise!. toss that flour!. i think it best to use regular cake flour and add your own leavening!. i woulda helped you eat your flat one!!Www@FoodAQ@Com

How long did you beat the batter!? It sounds like you just mixed until it was smooth:) !.!.!. cake batter needs to be well beaten AT LEAST 3 min, or 5 min!. is even better!. I just turn on my stand mixer, and clean up the kitchen, and let it beat, when I'm making a cake!.!.!.!.!.!.!.You'll really notice a big difference in the batter after 3 min!. You need that long time to get as much air incorporated into the batter as possible, to make it light & fluffy!.!.!.!.!.!.Www@FoodAQ@Com

ok i read the begining and the end of your question!. The end being more important!. "Why wouldnt it rise!?" Now i have a question for you!. Did you have a little one running around the house!? Im not really sure on how to explain this but hey!. The thumps (from running children) are vibrating to the stove and your cake, thus making it fall!. So next time tell the little ones, to go outside and play or sit the h*** down!.Www@FoodAQ@Com

for the record !.!.!.on friday night i made a chocolate cake too, but with the assistance of betty crocker!. it wa a choclate fudge cake with chocolate fudge icing!.!.!.(can you tell i had a craving) and i'll tell you!.!.for $3 you can't beat it!.!.!.but happy baking!.!.!.Www@FoodAQ@Com

definitely the flour
you might have beaten the mix too much you don't want to knock all the air out of it you are trying to incorporate air

flat means u were checking the oven too much!.!.u shouldn't actually let the heat come out before 30 minutes (or 20-30 in ur cake's case)!. It might also be the quality of the oven u used!. some are just not meant to bake 8(Www@FoodAQ@Com

once you add the flour you should not beat any more but stir with a metal spoon, also out of date flour would not help as the rising agent will not workWww@FoodAQ@Com

Try doing it this way!.

1 cup of sugar, 3 eggs
add a tiny bit of butter
add a little bit of heavy cream, something like 1/2 cup!.
mix it all together with a electric mixer!.
put unsweetened cocoa in it!.
mix it all again!.
then start pouring the flour!. just normal cake flour!.
add a pinch of baking soda to rise ur cake, something like 1/2teaspoon!.
smooth the mix etc!.!.!.

preheat the oven to 350oF!. for about 15/30min!.

it didnt rise cuz of the temperature u put the cake on!.
bcuz u did not put baking soda !.
bcuz the flour u used was out of date!.
