It is pronouce like you spelled it but it is actuallu spelled "paillard", it is either a piece of veal or chicken pounded thin like a cutlet and fried in butter, served with a garnish of either a compound butter which is butter mixed with spices, citrus juice and seasoning or a veg garnish like mushrooms, fried onions or just a slice of lemon, some places will serve a steak with ia compund butter with garlic, shallots and herbs, known as maitre de hotel butter!.

It is not breaded but can be dredged in flour before sauteing, it is very thin and cooked in second, almost with out colouring, it is not a common dish but is still avaiable on some french restaurant menus!.Www@FoodAQ@Com

What I know is that Payard is actually a person!. His full name is Francois Payard and he is one of the most famous and successful pastry chefs!. There are several restaurants and cafes that bear his name: Payard Patisserie and Bistro found in New York, Las Vegas and even abroad like Japan and Brazil!. And Veal Payard is, I think, an entree from the Payard menu!.Www@FoodAQ@Com
