you can marinate it overnoght in a !.25 viniger !.75 oil with onion, thyme, garlic salt a pinch!. If no time roast it at 350 over carrot onion and celery which will flavor the gravy!.

This is a classic sauce that goes well over most grilled or oven baked dishes!. This is one of the most versatile sauces in the world!.
INGREDIENTS:
· 1 cup butter, melted and hot
· 3 egg yolks
· 3 tablespoons white wine vinegar
· 1 tablespoon onion, finely chopped
· 1 teaspoon freshly ground black pepper
· 1/2 teaspoon fresh or dry chervil, finely chopped
· 1/2 teaspoon fresh tarragon, finely chopped
PREPARATION:
Put onions, vinegar, tarragon, chervil and pepper in a saucepan and bring to a boil!. Reduce to about 1-2 teaspoons of liquid!. Stir constantly!. Remove from stove and let cool!. Put egg yolks and cooled mixture in a blender!.

Invest in a crockpot, if you don't have one already!. You can get a nice, brand name, huge one for about $20-25!.!.!.!.!.
I love to toss a roast in with a can of cream of mushroom and onions!. Maybe an hour or two later, I'll add in chopped carrots and potatoes, a bit of celery!.!.!.!.!.
Get a loaf of wheat or white French bread from any grocery deli!.!.!.!.shouldn't be more than $2!.!.!.!.!. toast it, butter it!.!.!.!.!. serve it with the roast!.!.!.!. that is one of my boyfriend's favorite dinners!.
Crockpots are invaluable!. I love mine!. I'm 28 and I feel a little like an old lady for confessing to my love for crockpots!.!.!.!. but you can Google and find ENDLESS recipes for crockpots!.

Standing Rib Roast
1 Standing Rib Roast (about 4 lbs!.)
2 heads of garlic peeled
1 t!. salt
Process the garlic with the salt in the food processor until it forms a paste!. Add 3 T!. oil and process 30 seconds more!. Add 1 t!. fresh ground pepper!.
Spread the garlic mixture evenly over the roast!.
Preheat oven to 450 degrees F!. Place roast on a rack in a 9 x 12 inch roasting pan!. Add 2 C!. red wine to the bottom of the pan or a good beef stock!.
Roast for 20 minutes at 450°F!. and then turn oven down to 350°F!. Roast 18 minutes per pound for rare or 22 minutes per pound for medium done!. Let stand 15 minutes before carving!. Serve with pan juices!.
