i work at a catering service so I may have a different definition of easy but here is a quick shot

peanut butter cookies
cheesecake (make sure all your ingrediants are room temp)
cinni buns (you can buy those in a can and they are just as good)
truffles (dip them in hot chocolate mix, coca powder, or powdered sugar)

Home-Alone Chocolate Pudding
3 Tbsp!. sugar
2 Tbsp!. Dutch process cocoa
1 Tbsp!. cornstarch
3/4 cup 2% low fat milk
1/4 tsp!. vanilla extract

Combine sugar, cocoa, and cornstarch in a 1 quart glass measure, and stir well!. Gradually add milk, stirring with a wire whisk!. Microwave milk mixture at HIGH for 1-1/2 minutes, and stir well!. Microwave at Medium High (70% power) for 1-1/2 minutes or until mixture is thickened!. Add the vanilla extract, and stir well with a wire whisk!.
Yield: 1 serving (serving size: 3/4 cup)!.

HillBilly Cake

1 1/2 cups sugar
2 eggs
1/2 cup melted butter
2 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1 can (20 ounces) undrained crushed pineapple
(The pineapple can be sweetened or unsweetened)
1 cup light brown sugar (For Cake Topping)
1 cup chopped walnuts (For Cake Topping)

Mix ingredients together and pour into a greased 9 x 13 baking pan!. Top with the light brown sugar and the chopped walnuts!. Bake at 350 F!. for 40 minutes!.

Mix chocolate pudding with Cool Whip and pour into graham cracker pie crust!. Chill until needed!. Eat and enjoy your Chocolate Moose (Mousse) Pie!.

SPECIAL BANANA COCONUT CAKE

1 coconut pecan frosting mix
1 c!. rolled oats
1/3 c!. butter
1/4 tsp!. butter flavoring
1/4 tsp!. coconut flavoring
4 eggs
2 lg!. bananas, mashed
1 c!. dairy sour cream
1/4 tsp!. banana flavoring
1 supermoist yellow cake mix

Combine frosting mix, oats, butter and butter and coconut flavorings in heavy saucepan!. Stir over moderate heat until butter melts and mixture is crumbly!. Set aside!. Beat eggs in large bowl!. Beat in bananas, sour cream, banana flavoring and cake mix!. After adding cake mix beat about 4 minutes until light and fluffy!.
Spoon half the batter into well greased 10-inch tube pan!. Sprinkle 1 cup of the crumbly mixture over the batter mixture!. Continue with the batter and crumbly mixtures ending with the crumbly mixture on top!. Bake at 350 degrees for 50 minutes!. Cool upright in pan!. When cool remove to plate, crumbly mixture on top!. Freezes well!.

BANANA CAKE WITH COCONUT TOPPING

2 very ripe med!. bananas, sliced
1/4 c!. vegetable oil
1 egg
1 1/2 c!. cake flour
2 tbsp!. plus 1/2 tsp!. granulated sugar, divided
1 tsp!. each double acting baking powder, vanilla extract, and imitation butter
flavor
1/2 tsp!. baking soda
1 tbsp!. plus 1 tsp!. shredded coconut
1/2 tsp!. ground cinnamon

Preheat oven to 350 degrees!. Spray 8 inch round cake pan or 8 x 8 x 2 inch baking pan with non-stick cooking spray; set aside!. In medium mixing bowl, combine bananas, oil, and egg, using electric mixer beat until well blended (mixture will contain small lumps of bananas)!. Beat in flour, 1 tablespoon plus 1 1/2 teaspoon sugar, the baking powder, vanilla, butter flavor, and baking soda; pour into sprayed pan and set aside!. In small bowl, combine coconut, remaining 2 teaspoons sugar, and the cinnamon; sprinkle over batter!. Bake for 20 to 25 minutes (until a cake tester, inserted in center comes clean)!. Let cake cool in pan 5 minutes, then remove from pan

2 C!. butter
1 1/2 C!. brown sugar
4 eggs
1 tsp salt
12 oz chocolate morsels
1 1/2 cups sugar
2 tsp vanilla
4 1/2 C!. flour
2 tsp baking soda
Beat butter, sugars, vanilla with mixer until creamy!. Add eggs; beat till fluffy!. Add flour mixture gradually!. Add chocolate chips!. Drop by teaspoonful onto ungreased cookie sheet!. Bake 8-10 minutes or until golden brown!. makes approximately 12 dozen!.

White Chip Chocolate Cookies
Cream Together:
1 C!. margarine
2 eggs
2 C!. sugar
Add:
2 tsp vanilla
2 C!. flour
1/2 tsp salt
3/4 cocoa
1 tsp soda
1 2/3 C!. white chips
Bake at 350 degrees for 8-9 minutes!. Drop by teaspoon!. Dont over bake!. Makes 4 1/2 dozen cookies!.

Outrageous Chocolate Chip Cookies
1/2 C sugar
1/2 C!. butter
1/2 tsp vanilla
1 C!. flour
1 tsp baking soda
6 oz chocolate chips
1/3 C!. brown sugar
1/2 C!. peanut butter
1 egg
1/2 C!. oatmeal
1/4 tsp salt
Beat sugar, butter, peanut butter, vanilla, and egg until creamy!. Mix in dry ingredients and chocolate chips!.
Drop by rounded tablespoons on an ungreased cookie sheet about 2 inches apart!. Bake 10 to 12 minutes!. let cool 1 minute before removing from pan!.

Ultimate Chocolate Chip Cookies

Preparation time: 30 to 35 minutes
Baking time: 8 to 13 minutes/baking sheet
About 3 dozen cookies

1-1/4 cups firmly packed light brown sugar
3/4 cup Butter Flavor CRISCO all-vegetable shortening or 3/4 Butter Flavor Crisco stick
2 tablespoons milk
1 tablespoon vanilla extract
1 egg
1-3/4 cups all-purpose flour
1 teaspoon salt
3/4 teaspoon baking soda
1 cup (6-ounce package) semi-sweet chocolate chips
1 cup pecan pieces (optional)*

Heat oven to 375oF!. Combine brown sugar, Butter Flavor Crisco Shortening, milk and vanilla in large bowl!. Beat at medium speed of electric mixer until well blended!. Beat egg into creamed mixture!.
Combine flour, salt and baking soda!. Mix into creamed mixture until just blended!. Stir in chocolate chips and nuts, if used!.
Drop rounded measuring tablespoonfuls of dough 3 inches apart onto ungreased baking sheet!.
Bake one baking sheet at a time at 375oF for 8 to 10 minutes for chewy cookies (they will look light and moist), or 11 to 13 minutes for crisp cookies!. DO NOT OVERBAKE!. Cool 2 minutes on baking sheet on a cooling rack; remove cookies to rack to cool completely!.

* If nuts are omitted, add an additional 1/2 cup semi-sweet chocolate chipsWww@FoodAQ@Com
