Depends on what you are cooking!. For sloppy joes I just use the cheapest drug store rot gut I can afford!. If, however, I am suateeing some pai d'fuigras, I use only Courvoissier VSOP!. In my kitchen, regardless of quality, usually much more of it goes into the chef than into the pan!.

A professional chef friend of mine told me that for consistent quality at any bistro or dram shop, there is not much better domestic brandy than Christian Brothers!.

If one is spending major money on fancy booze, why in the world would anyone mix it with anything!?

Best to use the same Brandy that you would consider drinking!.
