I have two ideas for you !.!.!. and they both are delicious !.!.!.!. = )

Creamy Bacon-Cheese Mashed Potatoes

4 baking potatoes, like russets, about 3 pounds, peeled and cut into 1-inch pieces
1 3/4 teaspoons salt
1/2 cup heavy cream
4 tablespoons butter
1/4 teaspoon ground black pepper
8 slices bacon, cooked crisp and crumbled
1/2 pound sharp cheddar, grated
1/4 cup sour cream
1/4 cup chopped fresh chives
Freshly ground black pepper

Place the potatoes and 1 teaspoon salt in a heavy 4-quart saucepan and cover with water by 1-inch!. Bring to a boil!. Reduce the heat to a simmer and cook until the potatoes are fork tender, about 20 minutes!. Drain in a colander and return to the cooking pot!. Add the cream, butter, remaining 3/4 teaspoon salt, and black pepper!. Place the pan over medium low heat and mash with a potato masher to incorporate the ingredients and achieve a light texture, about 4 to 5 minutes!. Add the bacon, grated cheese, sour cream, and chopped chives and stir until thoroughly combined!. Season, to taste!.


Baked Mashed Potatoes with Parmesan Cheese and Bread Crumbs

1 tablespoon butter
4 pounds russet potatoes, peeled, cut into 1-inch pieces
1 cup whole milk
1/2 cup (1 stick) butter, melted
1 1/2 cups grated mozzarella
1 cup freshly grated Parmesan
Salt and freshly ground black pepper
2 tablespoons plain dry bread crumbs

Preheat the oven to 400 degrees F!. Coat a 13 by 9 by 2-inch baking dish with 1 tablespoon of butter and set aside!.

Cook the potatoes in a large pot of boiling salted water until they are very tender, about 15 minutes!. Drain; return the potatoes to the same pot and mash well!. Mix in the milk and melted butter!. Mix in the mozzarella and 3/4 cup of the Parmesan!. Season, to taste, with salt and pepper!. Transfer the potatoes to the prepared baking dish!. Stir the bread crumbs and remaining 1/4 cup of Parmesan in a small bowl to blend!. Sprinkle the bread crumb mixture over the mashed potatoes!. Recipe can be prepared up to this point 6 hours ahead of time; cover and chill!.

Bake, uncovered, until the topping is golden brown, about 20 minutes!.Www@FoodAQ@Com

well 2 easy options here,

mashed potatos w/ cheese -
take off skin of potatos, chop up thin, boil untill you can easily break the potato peice with your hands, mash up with a wisk or mixer, add butter 2tbs for 3 small potatos (1 serving), then add 1/2 cup of buttermilk (if you dont have buttermilk, see recipie 2) you can use milk but its a completely different taste

cheesy potato soup-
follow all recipies above, but add milk instead of buttermilk, this time 1 cup!. saute a small onion in a frying pan with oil salt and pepper, toss that in the potato soup, finally add some shredded cheddar (1/2 a small block) and bring to a simmer!.

CREAM CHEESY POTATO MASH

6 medium to large potatoes
1/2 cup milk
3 t!. butter
1 t!. salt
1/4 cup sour cream
1/2 stick softened cream cheese (4oz!.)
1 small onion (chopped)
1 cup shredded cheddar cheese

Preheat oven to 325F degrees!.
Peel potatoes and cut into cubes!. Boil potatoes 15 mins!. or until done!. Drain and transfer potatoes into a large mixing bowl, add butter, salt, cream cheese, sour cream, milk!.

Mix with hand mixer until blended together!. Add chopped onion, cheese and stir!.

Place in oven-safe casserole dish and bake at 325 degrees for 35-40 minutes!.

OR

CHEESY BBQ GARLIC MASHED POTATOES

1 lb potatoes, peeled
3 tablespoons butter or spread
1/2 teaspoon garlic powder
1/4 cup bbq sauce
2 tablespoon vinegar
1/2 cup sharp cheese, shredded

Cut potatoes and cook in boiling water until tender!. Mix BBQ sauce with Vinegar!.
Drain potatoes, and place in large bowl with butter or spread and BBQ sauce mixture!. Mix to desired consistancy, then fold in garlic powder and cheese!. Enjoy!

Other Options: Place potatoes in bakeware, sprinkle cheese on top and broil until cheese is browned and melted!.

Add egg and place in a hot pan for 2 minutes then flip and cook for an additonal 2 minutes!.

OR

CHEESY MASHED POTATOES

2 c!. instant potato flakes
1 (8 oz!.) jar Cheez Whiz
1/3 c!. sour cream
1/3 c!. chopped green onions

Prepare potatoes according to directions on package, except omit milk!. Heat Cheez Whiz in microwave!. Stir all ingredients together until well blended!.

OR

CHEESY MASH POTATOES

6 to 8 potatoes
1/4 to 1/2 c!. milk
1/2 to 1 stick butter
1 egg
1/2 c!. Parmesan cheese
4 oz!. Mozzarella cheese
Salt to taste
Pepper to taste
Parsley flakes to taste

Peel and cook potatoes!. Mash potatoes!. Add milk, butter, egg, Parmesan cheese, salt and pepper, parsley flakes!. After potatoes are mashed, add Mozzarella cheese!. Fold into potatoes!. Put potatoes into greased baking dish, dot top with butter!. Bake at 350 degrees for at least 20 minutes until surface is brown, no more than 30 minutes!.
