Veal Marsala

8 veal cutlets (about 3 ounces each)
Salt and freshly ground black pepper
2 to 3 tablespoons unsalted butter
2 to 4 tablespoons olive oil
1 large shallot, finely chopped
2 to 4 garlic cloves, smashed
2 ounces assorted mushrooms, sliced
1/2 cup sweet Marsala
3/4 cup low-salt chicken broth
Leaves from 1 fresh rosemary sprig

Sprinkle the veal with salt and pepper!. Melt 1 tablespoon of butter and 1 tablespoon of oil in a heavy large skillet over medium-high heat!. Add 4 veal cutlets and cook until golden brown, about 1 1/2 minutes per side!. Transfer the veal to a plate!. Add another tablespoon of butter and oil, if necessary!. Repeat with the remaining 4 cutlets!. Set the cutlets aside!.
Add 1 tablespoon of oil to the skillet!. Add the shallot and garlic!. Saute until fragrant, about 30 seconds!. Add a tablespoon of the olive oil, if necessary!. Add the mushrooms and saute until tender and the juices evaporate, about 3 minutes!. Season with salt!. Add the Marsala!. Simmer until the Marsala reduces by half, about 2 minutes!. Add the broth and the rosemary leaves!. Simmer until reduced by half, about 4 minutes!. Return the veal to the skillet!. Pour in all of the pan juices!. Cook just until heated through, turning to coat, about 1 minute!. Stir the remaining 1 tablespoon of butter into the sauce!. Season the sauce with salt and pepper, to taste!.

Using tongs, transfer the veal to plates!. Spoon the sauce over the veal and serve!.Www@FoodAQ@Com

Ingredients
1 lb penne or ziti pasta
3/4 cup olive oil
1/2 cup kalamata olive, pitted (or more, to taste)
2-3 large fresh tomato, chopped
1 jalapeno pepper, seeded and minced (optional)
black pepper
10-12 leaves fresh basil, julienned
1/4 lb feta cheese, crumbled
Directions
1Cook the pasta in a large pot of boiling water until al dente; drain!.
2While the pasta's cooking, mix next four ingredients together in a large bowl!.
3Add cooked pasta; toss so pasta is thoroughly coated with oil and tomatoes are distributed evenly!.
4Sprinkle with black pepper to taste and shreds of basil and toss again!.
5Crumble feta on top!.

Italian Sausage Soup with Tortellini

INGREDIENTS
1 pound sweet Italian sausage, casings removed
1 cup chopped onion
2 cloves garlic, minced
5 cups beef broth
1/2 cup water
1/2 cup red wine
4 large tomatoes - peeled, seeded and chopped
1 cup thinly sliced carrots
1/2 tablespoon packed fresh basil leaves
1/2 teaspoon dried oregano
1 (8 ounce) can tomato sauce
1 1/2 cups sliced zucchini
8 ounces fresh tortellini pasta
3 tablespoons chopped fresh parsley

DIRECTIONS
In a 5 quart Dutch oven, brown sausage!. Remove sausage and drain, reserving 1 tablespoon of the drippings!.
Saute onions and garlic in drippings!. Stir in beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage!. Bring to a boil!. Reduce heat; simmer uncovered for 30 minutes!.
Skim fat from the soup!. Stir in zucchini and parsley!. Simmer covered for 30 minutes!. Add tortellini during the last 10 minutes!. Sprinkle with Parmesan cheese on top of each serving!.

Baked Ziti is very good, and a good starter for moving on to more complicated italian dishes!.!.!.

Baked Ziti
Prep Time: 15 minutes
Start to Finish: 1 hr 10 minutes
Ingredients:
6 cups (16 oz!.) Ziti, uncooked
3 cups (about 26-oz!. jar) spaghetti sauce, divided
1-3/4 cups (15 oz!.) ricotta cheese
2 cups (8 oz!.) shredded mozzarella cheese
1/4 cup chopped fresh parsley or 1 tablespoon dried parsley flakes
1 egg
1 teaspoon dried oregano leaves
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
3 tablespoons grated Parmesan cheese

Instructions:

Heat oven to 375°F!.
Cook pasta according to package directions for 9 minutes; drain!.
In large bowl, stir together hot pasta, 1-1/2 cups spaghetti sauce, ricotta cheese, mozzarella cheese, parsley, egg, oregano, garlic powder, salt and pepper!.
In 13 x 9 x 2-inch baking dish, spoon pasta mixture; top with remaining 1-1/2 cups sauce!.
Sprinkle with Parmesan cheese; cover with foil!.
Bake 30 minutes or until hot and bubbly!.

This is one of my favorite pasta dishes!

Spaghetti alla Carbonara

5 ounces pancetta or bacon
1 medium onion, finely chopped
1/4 cup dry white wine
1 pound spaghetti
3 large eggs*
1 1/2 ounces Parmigiano-Reggiano, finely grated (3/4 cup)
3/4 ounces Pecorino Romano, finely grated (1/3 cup)
1 teaspoon coarsely ground black pepper
1/4 teaspoon salt

Cut pancetta into 1/3-inch dice, then cook in a deep 12-inch heavy skillet over moderate heat, stirring, until fat begins to render, 1 to 2 minutes!. Add onion and cook, stirring occasionally, until onion is golden, about 10 minutes!. Add wine and boil until reduced by half, 1 to 2 minutes!.

Cook spaghetti in a 6 to 8-quart pot of boiling salted water until al dente!.
While pasta is cooking, whisk together eggs, Parmigiano-Reggiano, Pecorino Romano (1/3 cup), 1 teaspoon coarsely ground black pepper, and 1/4 teaspoon salt in a small bowl!.

Drain spaghetti in a colander and add to onion mixture, then toss with tongs over moderate heat until coated!. Remove from heat and add egg mixture, tossing to combine!. Serve immediately!.Www@FoodAQ@Com

Chicken Tetrazzini

__________Step 1: In a medium saucepan, add the following:
3 boneless, skinless chicken breasts (fat removed)
5 cups HOT water
2 teaspoons salt
1 teaspoon onion salt
1/2 teaspoon celery salt
Cover these ingredients with a lid and bring to a boil!. Then REDUCE heat and SIMMER until cooked (20 minutes)

__________Step 2: Remove chicken from broth and shred into large pieces!.

__________Step 3: In largest pan (Dutch Oven) fill half full with VERY HOT water and add 2 bouillon cubes and 1 tablespoon of cooking oil!. Bring to a Boil!. Add 14 ounces of uncooked thin spaghetti and boil uncovered for 6 minutes!. Stir occasionally!. Drain and place spaghetti in a 9X13 glass baking dish!.

__________Step 4: In a medium saucepan, melt 3 tablespoons butter and sauté 1 cup sliced mushrooms!.
Remove from heat!. Then stir in the following:
2 tablespoons flour
1/2 teaspoon paprika
1/4 teaspoon pepper
1/8 teaspoon nutmeg
1 tablespoon lemon juice squeezed from a lemon
Cook (medium heat) and stir 2-3 minutes until thickened!.
Add 2 cups chicken broth and cook 3 more minutes!.
Add this sauce over the cooked spaghetti!.
___________Step 5: Add the following over the spaghetti and sauce!.
1 cup heavy whipping cream
Cooked and shredded chicken
3/4 cup grated parmesan cheese
__________Step 6: Combine, cover with plastic, and microwave for 6 minutes!. Then serve!.
At home, casserole may be covered with foil and baked at 375 degrees F!. for about 40 minutes or until the casserole bubbles!.Www@FoodAQ@Com

quick cheap and simple take 2 eggs crack open in bowl add pepper mixed italian sesonings bread crumbs cottage cheese parmesean cheese crushed garlic in a jar 2 tsps mix put in fridge an hour or so boil10 to 12 lasagna noodles take a pyrex baking dish put 4 noodles down add sauce from hunts or prego put some of the mixture on top of sauce add 3 more noodles and repeat add all mixture and some sauce add remaining noodles and some sauce lots of mozzareela cheese already shredded and parmesan cheese and some more italian seasoning cook at 325 for an hour let it cool for twenty minutes one thing when adding mixture try to some of the moisture out this dish should cost about six dollars and take ten minutes to prep and hour to cook while cooking make a salad and french breadWww@FoodAQ@Com

make a homemade pizza, go to the shops and buy a pizza base and add all your favourite ingredients but put some tomato sauce at the base so that they can stick pop it in the oven on 200c and have some oven chips with it!.Www@FoodAQ@Com
