Recipe for the masses?!
I am going to a lot of cook-outs this summer, and most request for each person to "bring a dish!." I usually do a quick dessert recipe that I have but I'm looking for something more substantial to bring!. Though my "bark" recipe is different and not generally offered, there are sooo many desserts and not usually too many "main course" dishes available!.
What would be a quick, easy recipe to bring to a LARGE party, especially a cookout!. Anything that can be cooked/prepared the night before or whipped together in a half hour to an hour!. Something substantial and tasty for parties from 20 to 100 people!.
Ideas!? Recipes!? (I'm no Julia Child, but I can follow any recipe!) I do like healthy foods, too!. So "diet" recipes are gladly accepted! (Well, any recipe would be gladly accepted!.!.!.)

Avocado, Tomato & Sweet Onion Salad
1 lg or 2 med!. avocados
juice of 1/2 lemon (about 2 tsp!.)
1 pint cherry tomatoes
1/4 med!. sized sweet onion (such as Vidalia or Maui)
3 T rice vinegar
1 T olive oil
kosher salt and coarsely ground black pepper to taste
3-4 large lettuce leaves
Peel avocado and remove pit!. Cut avocado into 1 inch chunks and sprinkle with lemon juice!. Wash tomatoes, cut each in half and add to bowl with the avocado!. Slice the onion very thin and add to the bowl!. Sprinkle vinegar over the vegetables, season with salt and pepper (preferbly kosher salt and coarsely ground pepper, but use what you have)!. Drizzle oil the mixture and gently stir until all ingredients are well combined!. Serve on a lettuce leaf, if desired!.
Cheri's Potato Salad
5 pounds potatoes peeled
2-3 stalks celery, finely chopped
1 medium onion, chopped
1/4 C cider vinegar
1/4 C cilantro, stemmed and chopped
1 T Dijon mustard
salt and pepper to taste
1 cup mayonnaise
6-8 hard boiled eggs
3-4 ripe tomatoes, cut in wedges
1-2 cucumbers, cut in slices
Cut peeled potatoes into cubes and cook in boiling water until tender -- do not overcook!. Drain and cool slightly!.
In a large bowl, combine all ingredients except tomatoes, and cumcumbers!. Mix well to combine flavors!. Arrange tomatoes and cucumbers on top!. Cover and chill thoroughly before serving!.
BUFFALO CHICKEN WINGS
10-12 chicken wings (2 1/2 lbs!.)
1/4 to 3/4 cup hot pepper sauce
1/4 cup butter
Vegetable or peanut oil (for frying)
4 cloves garlic, minced
1 shallot, minced (optional)
1 onion, finely minced (optional)
pinch of sea salt
Fill a heavy bottomed, deep-sided frying pan with at least 1 inch of oil and heat until temperature reaches 400°F!.
Split the wings at each joint and discard tips!. Rinse and pat dry with paper towels!.
Meanwhile, in a small saucepan, melt butter over low heat with minced garlic!. (Finely minced shallots or onions may optionally be added at the same time as the garlic!.) If you prefer a smoother sauce, a stick blender may be used to smooth it out and blend in the flavors of the garlic, etc!. When the garlic is a golden color, stir in the hot sauce!. Add a pinch of salt!.
When the oil is the correct temperature carefully lower the wings into the hot oil using a slotted spoon or wire basket, and deep fry for about 12 minutes, or until wings are cooked and crispy!.
Drain on paper towels!. Toss with the hot sauce, coating several times to cover well!.
Serving Suggestion: Serve with a side of extra hot sauce for dipping, and a bowl of Blue Cheese Dressing or Ranch dip and celery sticks!.Www@FoodAQ@Com

make your own pasta salad's!.!.!.use italian dressing to season add tons of veggies to stretch it out

I know it sounds a bit weird but I've had great success with this one!.!.!.!.!.!.If you take some pickles (doesn't really matter what flavor, just play with it a bit) and some sliced ham (found the thin sliced deli ham works pretty well) Spread the ham with cream cheese and then wrap it around the pickle!.!.!.!.!.!.Cut into slices, stack, wrap and refrigerate!.!.!.!.!.!.Ready to serve and eat!.!.!.!.!.May take some time the first few times you do it!.!.!.!.!.!.!.But I'll bet you no one else will have brought the same thing and it will be a hit!.!.!.!.!.!.Www@FoodAQ@Com

Every big party needs a snack!. This Weight Watcher's friendly snack will go fast, every time!
Seasoned Snack Mix
Ingredients
3 cups Rice Chex
3 cups Corn Chex
3 cups Cheerios
3 cups pretzels
2 tsp Worcestershire
2 tsp butter-flavored sprinkles
1/2 tsp garlic powder
1/2 tsp seasoned salt
1/2 tsp onion powder
In a 15 in x 10 in baking pan, combine cereals and pretzels!. Lightly coat with
nonstick cooking spray; drizzle with Worcestershire sauce!. Combine the remaining
ingredients and sprinkle over cereal mix!. Bake at 200 for 1-1/2 hours,
stirring every 30 min!. Cool completely, store in air-tight container!.
SERVING SIZE: 1 cup

For something really healthy and tasty, lentil salad is great!. Even people who think they don't particularly like lentils seem to love it!.
I have used this recipe from "Cooking Light" for years!. It's great and fine if made ahead of time!. Just be sure to not overcook the lentils!. They should still be slightly chewy, not mushy: also, seed the cucumber before dicing (just run a spoon down the middle)
Lentil Salad with Feta Cheese
Ingredients
1 1/4 cups dried lentils
3 tablespoons fresh lemon juice
1 1/2 tablespoons olive oil
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/8 teaspoon coarsely ground pepper
1 garlic clove, crushed
1 1/2 cups quartered cherry tomatoes
1 cup diced cucumber
1/2 cup (2 ounces) crumbled feta cheese
1/3 cup thinly sliced celery
Romaine lettuce leaves (optional)
Preparation
Place lentils in a large saucepan; cover with water to 2 inches above lentils, and bring to a boil!. Cover, reduce heat, and simmer 20 minutes or until tender!. Drain well, and set aside!.
Combine lemon juice and next 5 ingredients (lemon juice through garlic) in a medium bowl; stir with a wire whisk until blended!. Add lentils, tomatoes, cucumber, cheese, and celery to lemon juice mixture; toss gently to coat!. Serve on lettuce-lined plates, if desired!.
