Recipe for a frittata?!


Question: Recipe for a frittata!?
Tonight my man and I are going to make a "breakfast for dinner"!. We are going to have bacon,biscuits or pancakes and I want to make a frittata in the oven!. I was thinking of adding some veggies and cheese, just bought some fresh asiago!.!.!.!.!.!.!.

Any recipes!?

This serves 6 as a first course, or 4 as a main course!.!.!.!.!.BTW, it's WONDERFUL cold or room temperature, as well!.!.!.!.!.(this is where leftovers come in!!!)

Fritatta Italiano con Asiago

6 eggs, beaten
3/4 cup shredded Asiago
1/2 teaspoon black pepper
Pinch salt , to taste
1 teaspoon butter
1/4 cup slice green onion
1/2 cup chopped cooked asparagus (or zucchini)
8 slices bacon, cooked crisp and crumbled (large crumbles)
1 tablespoon chopped parsley leaves

Preheat oven to broil setting!.
In medium size bowl, using a fork, blend together eggs, Parmesan, pepper, and salt!. Heat 12-inch non-stick, oven safe saute pan over medium high heat!. Add butter to pan and melt!. Add asparagus (or zucchini) and crumbled bacon and onion to pan and saute for 2 to 3 minutes!. Pour egg mixture into pan and stir with rubber spatula!. Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set up on top!. Sprinkle with parsley!.

Place pan into oven and broil for 3 to 4 minutes, until lightly browned and fluffy!. Remove from pan and cut into 6 servings!. Serve immediately!. Enjoy!!!

Frittata:- Vegetable!.
500g Frozen Mixed Vegetables!. (thawed)
6 Eggs!. (whisked)
1 Onion!. (sliced)
1-2 Cloves Garlic!. (crushed)
Soften onions and garlic in a little oil and add the vegetables!. Season to taste and spread out evenly!.
Pour in the whisked eggs and let them work their way through the vegetables!.
Cook gently until the bottoms of the eggs are set!.
Transfer to a preheated oven and grill (broil) until the top is set!.
Serve onto a plate and cut like a pizza!.
(you will need to use a frying pan with a heat proof handle, or protect it with a bit of foil)Www@FoodAQ@Com
