Question: How to make cooked salmon that's a little bit too dry, more flavorful and tender!?
my dad cooked salmon for us yesterday and though it was tasty, i found it to be a little bit tough and dry!. is there anything i can do to make it more tender and flavorful!?Www@FoodAQ@Com


Answers:
Fish is harder to cook, he probably cooked it too long that's why it was dry!. I fry it a pan with butter lemon, and some pepper, toward the end I add a splash of red wine, really gives it a good flavor!. I would say only cook it for about 5-8 minutes on each side!.Www@FoodAQ@Com

If it's a bit tough and dry there isn't anything you can do!.

I would turn it into Salmon Cakes (same as you would crab cakes)
or Salmon salad either like you would make tuna for sandwiches, or pull the salmon apart with forks and add it into your tossed green salad!.

Another idea would be to make it into a quiche or frittata recipe for that follows!.

Dinner or Brunch Salmon Frittata

4 tablespoons olive oil
1/4 medium onion, chopped
salt and pepper to taste
4 ounces salmon
8 black olives, chopped
6 eggs
2 tablespoons milk
2 tablespoons heavy cream
1/2 (8 ounce) package cream cheese, cubed


Preheat the oven to 350 degrees F (175 degrees C)!.
Heat olive oil in an 8 inch oven-safe skillet over medium heat!. Add onion, and season with a little salt and pepper!. Cook, stirring until translucent!. Add the salmon and olives; cook and stir briefly to release the flavors!.
In a medium bowl, whisk together the eggs, milk and cream!. Pour over the salmon and onion, and stir gently!. Stir in the softened cream cheese or you can scatter cubes of cream cheese over the top!. Cook over medium heat without stirring, until the edges appear firm!.
Place the skillet in the preheated oven, and bake for 20 minutes, or until nicely browned and puffed!. Flip onto a serving plate, and cut into wedges to serve!.

1/2 pound fresh pineapple chunks
1 cup refrigerated mild salsa
1 tablespoon honey mustard
2 teaspoons cornstarch
2 teaspoons prepared horseradish
1 1/2 pounds salmon fillets (ask for skin to be removed)
cooking spray
1/2 teaspoon lemon pepper seasoning
1 1/2 cups water
2 cups instant rice

Steps

1!. Chop pineapple into small pieces!. Stir together, in medium bowl, with salsa, honey mustard, cornstarch, and horseradish; set aside!.
2!. Cut fish into 4 servings, if needed!. Coat both sides of fish with cooking spray; sprinkle with lemon pepper seasoning!. Wash hands!.
3!. Preheat large sauté pan on medium-high 2–3 minutes!. Place water in medium saucepan!. Cover and bring to boil on high for rice!.
4!. Place fish in pan (wash hands); cook 3 minutes!. Turn fish and add salsa mixture!. Cover, reduce heat to medium, and simmer 5–7 minutes or until sauce thickens!.
5!. Meanwhile, stir rice into boiling water!. Cover, remove from heat, and let stand 5 minutes!. Fluff rice with fork; serve sauce over fish and riceWww@FoodAQ@Com

I have a recipe that I often use, and the salmon comes out very moist and tender!. Place the salmon skin side down on a glass dish that is lightly covered with olive oil!. Spread some dijon mustard on top of the salmon, then sprinkle some finely chopped onion and garlic cloves on top of the mustard!. Add a little salt and pepper, and then bake in the oven!. The baking time will depend on the size of your salmon filet!. I find that the mustard keeps the salmon very moist!.Www@FoodAQ@Com
