I feel your pain!.!. I have the same situation!!
I hope he can take a cooler at least!.!.!. this is what we do!.
Variety!!! Different luncheon meats, different cheeses, different breads, and different chips!. We also make him wraps with ranch that he seems to like quite a bit!.
He takes a thermos with hot soup, which is the right temperature at lunhtime!.
And eats leftovers such as pizza, pastas and fried chicken cold or room temperature!.
He likes to take bananas, grapes, and apples!.
For breakfast he takes cereal bars and pop-tarts!.

My husband is out in the heat all day so what I've found out that holds up best for him is a cooler packed with a lot of fruit!. With sandwiches, I use a sturdier bread (usually rolls, sometimes rye or pumpernickel if your husband likes those) and pack everything separately!. Even if you do put it together beforehand, the worst thing for sandwiches is putting on condiments and packing it!.!.!.!. that's sure to make it soggy!.
He'll take separate containers of fruit or thermoses of leftovers and that always works out the best!!Www@FoodAQ@Com

I always packed things like cold chicken, hard boiled eggs (would throw in those mini packets of salt), made all meat sandwhiches but packed condiments separately, I pack everything into small ziplocks, his ice chest had a little tray on top to keep things from sliding down into the water!. I would also cube up things like cantalope, watermelon, or cottage cheese, etc and put in a little rubbermaid storage container, especially in the hot weather!.Www@FoodAQ@Com
