Is there much difference in taste/quality between fresh pasta and dried pasta?!

Question: Is there much difference in taste/quality between fresh pasta and dried pasta!?
Answers:
Yes: the main difference is that dried pasta is made with only flour and water, and fresh pasta is made with eggs and flour!. Fresh pasta should be eaten with specific sauces - did you know that bolognese sauce should actually be eaten with fresh egg tagliatelle!? Fresh pasta, particularly stuffed fresh pasta, is often served with a lighter sauce so you can appreciate the texture and flavour!. Dried pasta is suited to other types of sauces, eg, tomato, creamy sauces etc!. Have a look in italian cookbooks by Claudia Roden, Anna del Conte or the grandmother of italian cooking, Marcella Hazan, to learn more about which sauces go with which pasta styles!.Www@FoodAQ@Com
