Side dish ideas.......?!


Question: Side dish ideas!.!.!.!.!.!.!.!?
I need some assistance from all the great cooks out there!. Im not looking for anything fancy, just very simple and something very picky family members will eat!.
The menu is, Slow Cooked Pork tenderloin with potatos, carrots and onion simmered in the same cooking liquid for 8 hrs!. Im makeing Mint chocolate chip mock mousse for dessert with peanutbutter brownie crumbles!. I need some help figuring out a second side dish!. Money is tight so I cant buy anything new!. Heres a basic rundown of what my cupbards hold
Instant rice, instant mashed potatos, canned peas, beans, cor and fozen veggies of the same!. Canned cream of mushroom soup, Pastas orzo, mannicotti, mini lasanga, spaghetti and angel hair!. I also have pasta sauces of traditional, meat flavored and garden all of the Cub brand variety!. I also have heavy cream, butter, and milk

You have kernal corn, or corn on the cob!? If its corn on the cob I think that would go really well!. And if its kernal corn, I think that would go really well!. (i love corn!.!.lol)

The menu sounds great as is but if you think another dish is needed you should consider a soup!. You can use the garden pasta sauce to make a nice tomato soup just add vegetable stock (bullion will work too) to the thickness you like and add the orzo, beans (if navy or garbanzo or kidney) mixed vegetables a little garlic,onion,celery and basil and you have an easy Minestrone!. Serve topped with Parmesan and croutons!. Good Luck!Www@FoodAQ@Com

I agree with Sweetgirl - I don't think you really need anything more but if you want something else, I would go with the frozen peas, they go great with both potatoes and carrots and maybe 'spice' them up a little with a cream sauce or some of the Cream of Mushroom soup!.

Well you have two starchy vegetables already so you don't need more starch as in a pasta or more potatoes!. I would cook the peas and season them really well!. If you had salad mix I would just toss up some greens with oil, vinegar, salt and pepper!.Www@FoodAQ@Com

I'd say that you don't need anything else!. Unless you forgot to mention that can of sliced pineapple or sliced peaches in the back of the cupboard, I wouldn't serve anything else!.Www@FoodAQ@Com

Black-Eyed Pea Salsa

This recipe is open to "interpretation"; use it as salsa with chips
or serve it as a salad!. The lime juice compliments the natural sweetness
of the black-eyed peas!.

1 cup black-eyed peas ( drain, if using canned )
2 tablespoons green chilies
1 tomato, finely chopped
1 scallion, finely sliced
Juice from half a lime
1/8 teaspoon salt
Tabasco to taste

Combine all of the ingredients in a bowl, and serve with tortilla
chips!. You may also serve it as a salad!. Makes about 1 1/2 cups!.

Note: If you are using fresh black-eyed peas, cover 1/2 cup
black-eyed peas with an inch or two of water!. Bring the pot to a boil, and
simmer for 45 to 50 minutes, or until the beans are tender!.Www@FoodAQ@Com

Cook the orzo at the last minute!. While it is still hot, encircle it with green and red veggies (not orange)!. If you can get a tomato, cut it into eighths and encircle the orzo with that!. Resist the temptation to use the cream of mushroom soup as that will make the meal even heavier!. You can sprinkle some large crystal kosher salt on the orzo and/or dribble some olive oil on the orzo/veggie/tomato dish!. This will work, although the meal will be very starchy (potato, carrot, pasta)!.Www@FoodAQ@Com
