Can water substitute for oil when sauteeing foods?!

i am following a recipe for potato and leek soup that calls for 1 tbsp oil to saute the vegetables before adding in broth!. can i use water or any other liquid to cook the vegetables instead of oil!?Www@FoodAQ@Com

Yes- spray the pan with cooking spray first, so that it browns!. Then add some chicken broth (for flavor and moisture) so the food cooks evenly and does not stick!. Adding some butter flavor and/or herbs is good for additional flavor also, as plain water would make it a bit bland!. For a soup though, even water would be just fine!. I use the chicken broth method more when making stir fries!.

4 tsps cornstarch !.
1 c water, room temperature
Directions
Step #1 Combine all ingredients!.
Step #2 Boil to desired thickness!.
Step #3 Remove from heat!.
Step #4 Cool before recipe use!.
Step #5 Add recipe ingredients & use as any cooking oil in any recipe!.

Normally No You need a fat to saute to saute in b/c one of the quality standards on a sauteed item is that it turns brown and that require two things :

A common mistake that people make when sauteing wet food like mushrooms is that they overload the pan which causes the water to come out of the product which further cools the pan and the product sweats rather than sautes
In your case you actually do want the product to sweat until it's soft and translucent , Personally I would prefer that you used clarified butter to sweat it in But in a pinch you can use water and periodically toss an ice cube into your pan

when i am dieting I use water instead of oil!.!.!.
The Leek and potato recipe I use simply calls for slicing the veggies and covering them with water and boil until tender!. then rice them!.!.

use butter, bacon fat, cooking spray, lard etc!.!.!. instead of the oil!. You need a fat to sautee foods!. You could also just boil the veggies in the broth!. It won't be exactly the same but you won't be able tell a difference in a soup!.Www@FoodAQ@Com
Not really!. The oil is part of the sauteing process!. If I were you I would just roast the veg!. or broil them or grill them!. If you just want to cook them slightly using veg!. broth that would be good!.Www@FoodAQ@Com
Yes, you can!. Since water will evaporate quickly, I would use about 1/4 c!. and if it evaporates too quickly before the vegs are cooked you could add a little more!.Www@FoodAQ@Com
