SWEDISH PANCAKES FOR A CROWD

3 eggs
1 1/4 c!. milk
3/4 c!. sifted all-purpose flour
1 tbsp!. sugar
1/2 tsp!. salt

Beat eggs until thick and lemon colored!. Stir in milk!. Sift dry ingredients; add to egg mixture, mixing until smooth!. Drop batter onto moderately hot buttered griddle (or use special Swedish griddle)!. Spread batter evenly to make thin pancakes!. Turn when underside is light brown!. Spoon melted butter over; sprinkle with sugar; stack!. Pass lingonberry sauce!. Makes 50!.Www@FoodAQ@Com

1 1/4 C!. all-purpose flour

4 T unsalted butter, melted

How to Make Swedish Pancakes

Step1--Beat eggs in large bowl with a whisk!. Then add the milk, flour, sugar and salt and whisk till smooth!.
Step2--Blend in the melted butter!.
Step3--Heat a skillet, medium-high!.
Step4--Add a bit of butter to the pan, then drop in the batter by tablespoonfuls!. Cook till golden brown on the bottom (about a minute or two), then flip and cook a minute or two longer!.
Step5--Keep the cooked pancakes in a dish in a warm (about 200 degrees F) oven while preparing the rest!.Www@FoodAQ@Com

There is a box mix ready to go called 'Lunds Swedish Pancake Mix" which is very good, easy to use and will make enough for your crowd!. Found in most basic grocery stores!.

I am most positive that the recipe the above sender (the first one) provided is not adequate for 50 pancakes!. These are suppose to be thin like crepes, but still!.!.!.!.!.I would double it, if I were to use it!.Www@FoodAQ@Com
