You don't need it in all types of sushi, but some recipes specifically ask for vinegared rice, such as temaki sushi (cone sushi), or nigiri sushi (usually salmon)!.

I personally don't really like the flavor of rice vinegar, so I tend to eat the milder and more Americanized versions of sushi!. Like a California roll!. Mmmmm!.!.!.

Yes, if you are making authentic Japanese sushi!. If you're making insipid westernized sushi, no you don't need it!. The rice vinegar seasons the rice and balances out the taste of the fish!.Www@FoodAQ@Com

No, you can just use regular white vinegar!. All it does is add a bit more flavor to the rice!. Rice vinegar is just more expensive, that's all!.Www@FoodAQ@Com
