Answers:
If you omit the brown sugar,(assuming that you are not going to use molasses) your cookies will be much crisper because of the melting point of the white sugar vs the brown sugar!. You can change that a bit by adding a little corn syrup if you have it to the white sugar!.
If you have neither molasses or corn syrup (Kayro) you might want to use shortening rather than butter!. The shortening will keep the cookies from getting overly crisp, it melts at a slower rate than butter!.Www@FoodAQ@Com

There really isn't a substitute, but since brown sugar is moist, I'd probably add an extra teaspoon of oil and use granulated sugar in place of brown sugar!. However, if you have molasses, that's an even better substitute because brown sugar has molasses in it!.

Good luck!Www@FoodAQ@Com

Just use regular white sugar - may change the taste slightly but should turn out okay!.

These are suggested substitutions for ! cup packed brown sugar from:
http://allrecipes!.com/HowTo/Common-Subst!.!.!.

1 cup white sugar plus 1/4 cup molasses and decrease the liquid in recipe by 1/4 cup OR 1 cup white sugar OR 1 1/4 cups confectioners' sugarWww@FoodAQ@Com

you can substitute the same amount of regular sugar and add a couple of tablespoons of molasses if you have it, (best) or maple syrup !. I've done it before and the recipe still turned out fine!. It tastes a little different but still good!.Www@FoodAQ@Com

I don't know any substitute for brown sugar but maybe if you have molasses you could mix that with the regular sugar!. Not for the color as much as the taste as well!.Www@FoodAQ@Com

I would use " Diet Brown Sugar" to begin with and if i did not have that then I guess I'd use Splenda- regular!. But I would " NOT" be using " {Regular Granulated Sugar} "

Food For Thought ( no pun intended)Www@FoodAQ@Com

Do you have molasses!? If not, do you have any kind of syrup!? Those will do in a pinch!. Good luck!.Www@FoodAQ@Com

To make one cup of brown sugar, combine one cup white sugar with 2 tablespoons sorghum molasses!. Mix well!. Use as needed!.Www@FoodAQ@Com

I've used 1 1/2 Tbsp molasses to granulated sugar as a substitute and it works fine!. Make sure you mix well so it's nice and thickWww@FoodAQ@Com

use regular sugar and some cinnamonWww@FoodAQ@Com
