Question: Can merigune (pavlova) be frozen!?
Answers:
You can freeze it!.!.!. HOWEVER!.!.!. when you defrost it, condensation forms and the small droplets of water destroy the structure of the meringue (pavlova)!.

When you buy it in the store, frozen or what have you, there are preservatives, additives and stabilizers (essentially all sorts of chemicals) added in so that defrosting doesn't reek havoc!.

Now contrast that with preparing it fresh, at home, you're not playing "fun with chemistry" adding in various combinations of elements from the Periodic Table to your baked goods so freezing then defrosting home-made meringue (pavlova) does not work successfully!.

All i know is that you can buy the pre-made and frozen in supermarkets,that doesn't mean to say you can freeze homemade with good results tho!.Www@FoodAQ@Com

A homemade meringue can not be frozen w/out a slue of preservatives added to it!. The water that forms upon defrosting would colapse a homemade version!.Www@FoodAQ@Com
