When you are looking to purchase steaks of beef, then my favorite cut would be the rib-eye, then the NY strip, then the filet, then the porterhouse (which is a t-bone steak with a NY strip on one side and a filet on the second side of the bone)
Always purchase choice or prime (prime is really hard to get) but at least choice!.
Steaks should be no thinner than 1/4 inch, but I always go with 1/2 inch thick!.
Look for good marbling in the meat (means good fat distribution throughout)Www@FoodAQ@Com

If you're making steak, then you want something like a t-bone or ribeye!. Ideally, you want something that looks "good enough to eat" with some good fat marbling throughout the meat, but that quality will cost extra!.
The best bet is to go to a butcher (even at the grocery store) and tell him/her what you have planned!. A good butcher will steer to toward what's good in the store that day: it's their job!.!.!.
Good luck!!Www@FoodAQ@Com
