Ive Just Discovered Feta Cheese?!

Stuff tomatoes with it and serve as an accompaniment to a roast for instance!. Delicious!!!
Slice a cap off the tomatoes, empty tomatoes of all seeds and soft bits!. Dice the feta into small cubes!. Chop one onion very finely!. Chop up a couple of pieces of garlic finely!.
Put some cubes of feta in each tomato, followed by a sprinkling of onions pieces, then a little garlic, then a pinch of pepper and a pinch of salt!. Keep layering the ingredients in this way and when they are full, slowly pour cream into each tomato until you can't get any more in!. top the tomatoes with the top slice you cut off previously and stick a cocktail stick into it to keep it together!. Cook in a hot oven, with just a very little quantity of olive oil in the dish to keep the tomatoes from burning!. Takes about 40 to 45 minutes or so!. you may need to cover the tomatoes with foil for a while to prevent the tops from burning!.Www@FoodAQ@Com

1 Tablespoon Chopped, Fresh Mint or 1 Teaspoon Dried Mint
1 Teaspoon Salt
1/2 Teaspoon White Pepper
1/2 Teaspoon Sugar (optional)
1/4 Pound Feta Cheese (crumbled)
8 Ounces Hot, Cooked Pasta
In large skillet, saute onion and garlic in oil until
onion is translucent!. Add tomatoes, mint, salt, pepper and
sugar!. Cook over medium-high heat, crushing tomatoes with
the back of a spoon and stirring frequently, about 10 to 15
minutes or until sauce tickens!. Stir in feta and heat through!.
Toss with hot, cooked pasta!.

You have stumbled onto one of my all time favorite delicacies!. Yes-- a necessity for Greek salad but a great pizza topping, a filling for Spinach pie, and for numerous other salads!. I can't go without it!.
You can get all kinds of packaged feta, but to me there's nothing like the real thing in a Greek or Italian deli, soaked in brine in a barrel!. Ambrosia!

I love feta cheese Tess and have been eating it for years but usually just with a salad or I will have it at lunch time on some Ryvita with cucumber!. My daughter has a Greek husband and when we visit them in Athens Feta is brought out at every meal - love it!! It is healthy too as it has less fat and calories than standard cheeses!.Www@FoodAQ@Com
