Question: What Meal Can I Cook At The Beach While On Vacation!?
We are going to the Outerbanks in 2 weeks for Vacation i'm in charge of 3 meals !.!. i'm not the best cook!.

My Aunt will cook 3 as well and she has Chicken, Pork Tenderloin and some sort of burger on her menu but, what can I cook that isn't the same and is quick and easy also cheap I'll be cooking for 7 people if that helps as well!. Any ideas are appreciated!Www@FoodAQ@Com

You didn't mention if there were kids, but anytime we go to the beach as a family Sloppy Joes are always a big hit with kids and adults!. Directions for these are on the can, atlhough we usually use about 1/3 again as much meat as the recipe calls for!. If you want to make them with a little more oomph make toased garlic buns with just a little butter and garlic melted and brushed on the bun before toasting!. We always serve them with french fries!.

Next, fish tacos are great and simple!. I use mahi mahi for the fish, but any mild flavored can be used and you can even substitute shrimp!.
Lightly dust the fish filets with flour (to which has been added salt and pepper)
Saute in a pan, preferably non stick, with a little butter and olive oil until done, usually just a couple of minutes!.
For sides I serve black beans and spanish rice, both of which are availabel in packages!.
For condiments I use both corn and flour tortillas, finely shredded raw cabbage, guacamole, sour cream, grated cheese and salsa!. If you can get the quesa fresca (spanish white cheese) and the Mexican sour cream they are better than the anglo versions!.

Finally, I would do a seafood boil!. Simply take shrimp and crabs and boil them with a spice mixture called "Shrimp Boil" or "Shrimp Crab Boil"!. Corn on the cob and new potatoes can be added to the boil (add potatoes before the seafood and corn after)!. A green salad completed the meal, although you shoudl have plenty of butter on hand for the potatoes and corn, ad cocktail sauce for the seafood!.Www@FoodAQ@Com

Veggies on the grill are always a big Hit!
you simply make seven seperate packs
or one large pack
take foil lay it out then pull up the sides a bit to be able to hol the veggies, then add some spices like garlic, chile powder
pepper and salt
then add some olive oil or butter
maybe even a little soy sauce or Worecestershire

Seal the top of the foil tightly before pacin on the grill

Good Vegies to use would be
Zuccini, Squash, Carrotts and Onion maybe even a little canned corn can be added to this blend

You can also grill corn on the cob wraped in foil for another meal
then backed potatos wrapped in foil for the 3rd
Now that we have your side dishes lets move on to the
main course
Meat
John Morell has smoked sausage and it great on the grill
sprinkle some some grill seasoning
Yum!
You can also Cook Shrimp
you can find it on sale alot of the time
Get the large Bagged Shrimp
They smaller the count the larger the shrimp
Thaw shrimp and put on Wooden skewers
Shrimp Kabobs
Bast with some Bar-B-Q Sauce while grilling
or even a butterery garlic Suace

You can Use A Vey Cheeap Cut As long As you
Marinade it first overnight
use some beeer in your Marinade sauce too
Helps to tenderize the meat

There's no reason why you couldn't do chicken or port just because your aunt is - you can prepare them differently as long as you aren't doing a back-to-back I think!. Working on the assumption that you're renting a condo or beach house I'd recommend the following:

- spaghetti & meatballs or baked ziti
- chicken casserole
- hot roast beef or hot turkey sandwiches
- shake & bake pork chops
- grilled brats/Italian sausages

All of the above can be combined with a side salad, veggie and fresh bread - if you have access to a store that sells it!. Otherwise you could substitute Pillsbury rolls!.
