Strip Steak with Pepper Cream Sauce
4 (6 to 8-ounce) strip steaks, 3/4 to 1-inch thick
Kosher salt
2 teaspoons black peppercorns, coarsely crushed
2 tablespoons clarified, unsalted butter
3/4 cup beef stock or broth
3 tablespoons cognac
3/4 cup heavy cream
1 tablespoon green peppercorns in brine, drained and slightly crushed
Preheat oven to 200 degrees F!.
Sprinkle steaks with kosher salt and crushed black pepper!. Heat butter in a 12-inch, heavy bottomed saute pan over medium heat!. Once butter is hot, add steaks and cook until browned on both sides, about 2 minutes per side for medium-rare and 3 minutes per side for medium!. Remove steaks from pan and place on a rack set on a sheet pan; place in oven to keep warm!.
Add the stock to the saute pan and whisk until the crispy bits release from bottom of pan!. Allow the liquid to reduce for 3 to 4 minutes over medium-high heat!. Add cognac, heavy cream, and green peppercorns to the pan!. Increase heat to high and cook, whisking continually, until sauce thickens slightly, just enough to coat the back of a spoon; this will take 5 to 7 minutes!.

1/2 cup onion, minced
1/2 cup tomato paste
1 1/2 cups raisin paste or whole raisins
4 1/4 cups cold water
1 tablespoon garlic, minced
1 1/4 cups balsamic vinegar
5 tablespoons applesauce
5 tablespoons roasted garlic paste
1 1/2 teaspoons mustard powder (dried mustard)
1/4 cup corn syrup
3 tablespoons Worcestershire sauce

1 teaspoon freshly ground pepper
Place extra-virgin olive oil in large sauce pot over medium high heat, add onions and reduce heat to medium!. Saute onions until golden brown then add tomato paste, cook for 1 minute!. Turn heat back to high, add remaining ingredients with exception of salt and pepper!. Bring to a boil, reduce heat to medium and simmer ingredients for 10 to 15 minutes!.
Remove pot from heat, place into blender* and puree until smooth!. Add salt and pepper!.
If the mixture is not smooth enough add a few teaspoons of water and puree until smooth!.
* When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes!. Transfer liquid to a blender or food processor and fill it no more than halfway!. If using a blender, release one corner of the lid!. This prevents the vacuum effect that creates heat explosions!. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth!.

In a large skillet, heat the olive oil on high heat, and saute the mushrooms, shallots, and garlic until softened and starting to brown!. Deglaze the pan with the Worcestershire sauce, scraping up any browned bits from the bottom of the pan!. Then add the veal jus or beef stock!. Cook for 5 minutes and remove from the heat!.

Steak with mushroom sauce!.!.!.grill or pan fry steaks!. Set aside!. Sautee mushrooms in same pan with a mashed garlic clove, salt and pepper, add 1/2 cup A1 or other steak sauce and a little water to thin it somewhat, return steaks to reheat, then serve!.Www@FoodAQ@Com
