Here are some ideas that I loved:

Fried potato wedges and cheddar cheese!.

Spinach and provolone, with peeled, thickly sliced tomatoes arranged on top halfway through baking!.

Chicken and mixed vegetable (tastes kind of like pot pie)!.

Using your recipe for broccoli quiche, substitute chopped spinach!. Just thaw a box of frozen chopped spinach!. Squeeze out as much of the moisture as you can!. Add it to the egg/cream mixture with some chopped onion and cheese!. Sometimes I chop up a couple of bacon strips, fry them till crisp and add it with the spinach!. Bake until done!. YUM!!
Another:
Use steamed asparagus chopped into 1 inch pieces and crab meat!. (canned is fine!. You could also use the artificial krab meat chopped) Add to the egg mixture with a bit of onion!. parsley and the cheese!. Bake till done!. If you like a little sweetness with the crab meat, Add some corn as well as the asparagus!. also very yummy!
