Well it pretty much depends on what the recipe is for!. For instance, you don't really want to use vanilla beans on something like cookies or brownies or even cakes because the real vanilla beans will be lost in the whole of the product!. However using vanilla beans in something like custards, ice creams, almost any dessert sauce, creme brulee (excellent in this) is great because the beans would be seen in the end product!. Have you ever had Philadelphia style ice cream!? Or maybe Breyers' ice cream!? Those little specks are the beans from the vanilla bean pod!. Not to mention the stuff ain't cheap!.
Now, as to how much!.!.!.well that is easy!. All or none!. The way you use the bean is to split it down the middle with a small paring knife lengthwise, without cutting the bean in two!. With the back of the same small paring knife, scrape down the middle of the opening to retrieve the contents of the bean!. You will see that a small amount of a dark mass has collected on the knife!. Those are the "beans"!. Place them in a bowl with your wet ingredients for whatever you're making!. If you need to heat your wet ingredients, you can add the split bean in the pan in addition to following the previous instructions!. Doing this will give you the most extraction of flavor!.
