Question: How do you make sopapillas!?
Answers:
*QUICK AND EASY SOPAPILLAS

1 cup butter
1/2 tablespoon of cinnamon sugar mixture
3 tortillas
1 tablespoon honey
1 oz!. vegetable oil

Heat oil in a small skillet until hot!. Melt butter in small microwavable dish-once melted add cinnamon sugar and honey
Fry 1 tortilla until bottom edge is golden brown then flip and do the other side!. Repeat with other tortillas!. Remove skillet from heat!.Pour out oil then add the butter mixture to the same skillet!.Soak one side then flip and repeat on other side!.
Let cool for 3 minutes, then serve and enjoy!.Add more cinnamon and sugar if desired!.

*Blue Corn Sopapillas

1 cup am blue cornmeal
1 cup am whole wheat flour
1 tablespoon dry yeast
2 teaspoon non-alum baking powder
1 teaspoon sea salt (optional)
1 tablespoon butter; softened
1 cup milk
1 egg; slightly beaten
1 teaspoon honey

Mix dry ingredients!. Cut or mash butter into dry ingredients thoroughly!. Stir liquids until honey dissolves!. Combine mixtures!. Stir gently but completely!. Let rise 1 hour!. If dough is still sticky, lightly stir in 2 to 4 tablespoons unbleached flour!. Divide dough in 3 parts!. Lightly knead each part in unbleached flour!. Roll dough thin, 1/8 inch thick!. Cut into squares or pie shapes!. Heat oil to 375 F!. Drop into hot oil!. Cook until golden on one side; turn once; cook till golden!.

*Crescent Sopaipilla / Sopapilla Cheesecake

2 (8 ounce) packages cream cheese
2 (8 ounce) packages refrigerated crescent dinner rolls
1 cup sugar
1 teaspoon vanilla extract or almond extract
1/2 cup margarine or butter, melted
1/2 cup cinnamon sugar

Using a 9 x 13 baking pan, unroll one package of refrigerated crescent rolls and line the bottom of the pan!.Flatten!.
Mix together the cream cheese, sugar and extract!.Spread over the crescent rolls!.
Unroll the other can of crescent rolls and place on top of cream cheese mixture!.
Pour one stick of melted butter or margarine over the top and sprinkle with about 1/2 cup of the cinnamon sugar mixture!.Bake at 350 degrees for 30 minutes!.

*SOPAPILLAS (LITTLE PILLOWS)

1 pkg!. dry yeast
1/4 c!. lukewarm water
3/4 c!. milk
6 tbsp!. sugar
1 tsp!. salt
2 tbsp!. butter
1 beaten egg
3 c!. flour

Dissolve yeast in water!. Bring milk, sugar, and salt to a boil!. Stir in butter!. Cool to lukewarm!. Stir in yeast mixture, then egg!. Beat in flour!. Cover dough and let rest for 1-1 1/2 hours!. Knead and let rest 15 minutes!. Roll dough 1/4 inch thick; cut into 2 x 3 inch strips (or diamond shape)!.
Fry in deep fat at 350 degrees until golden brown, turning only once!. Drain on paper towel!. Serve with honey-butter (beat 1/2 pound butter and 1/4 cup honey) or just honey is good too!. Tear open corner of sopapillas and put honey-butter inside!. This is much easier than it sounds and will be worth it!.

*MEXICAN SOPAPILLAS

2 c!. flour
3 tsp!. baking powder
1/2 tsp!. salt
1 tbsp!. shortening
Oil for deep frying

Sift dry ingredients together in bowl!. Cut in shortening until crumbly!. Add 1/2 cup warm water gradually, stirring with fork!. Dough will be crumbly!. Turn onto lightly floured surface!. Knead until smooth!. Divide in half!. Let stand for 10 minutes!. Cut into 3" squares!. Fry, several at a time, in deep fat at 400 degrees for 30 seconds on each side!.

1 package active dry yeast
11/2 cups milk
1/4 cup sugar
1/4 cup melted unsalted butter
1 large egg
4 1/2 cups all-purpose flour
1 tablespoon cornmeal
1 teaspoon salt
Vegetable oil, for frying
Sugar and cinnamon mixture to cover sopapillas in
Honey

In the bowl of an electric mixer fitted with a dough hook, combine the yeast, milk, sugar, and butter, and mix well for 2 minutes!. Add the egg, and mix well!. Add 4 cups of the flour, the cornmeal and salt!. Beat at low speed until all the flour is incorporated, then on medium speed until a ball of dough forms, adding more flour as needed if too sticky!.
Remove from the mixer, form into a ball, and place in a lightly oiled bowl!. Cover and let rise in a warm place until nearly doubled, about 1 hour!.

Turn out the dough onto a lightly floured surface and pat into a thick rectangle, about 1-inch thick!. Roll out until about 1/4-inch thick, and with a sharp knife, cut the dough into squares, about 2 1/2 to 3 inch-square!.

Heat the fryer to 360 degrees F!.

Drop the dough into the hot oil, being careful not to overcrowd the sopapillas as they are cooking, and turning them constantly to cook on all sides until golden, about 3 minutes per batch!. Remove the sopapillas from the oil with a slotted spoon and drain on paper towels!.

While still warm, toss inthe sugar and cinnamon mixture!. Serve with honey!
