Need to modify a frittata recipe: don't have an oven proof non stick pan?!
All of the frittata recipes I want to try call for a non-stick pan!. You start the cooking on the stove top, but finish under the broiler!. I do not have a broiler-safe non-stick pan!. Am I better off:
A!. pouring the mix into individual-sized baking dishes!? Skipping the stove top completely, just baking, and finishing with 2 minutes of broiling to brown the top!?
B!. Using a regular pan (not teflon coated), starting on the stove top, then broiling per the recipe, and just hoping it doesn't stick too much!?

You don't need a non stick pan, just spray a pie plate or cake pan with Pam or some other oil spray!. Slide under the broiler when ready and keep an eye on it!. Make your recipe as per usual!.Www@FoodAQ@Com
I never broil fritattas; they seem to get brown enough w/ the regular baking time!.
In your case, I'd suggest individual serving dishes!. That sounds very nice!. Oil them well!. And maybe start the fritatta mixture on teh stove, and when slightly coagulated, then scoop into indiv!. serving dishes to finish in the oven!.Www@FoodAQ@Com

Line the inside of the pan with parchment paper, it is oven proof, non stick and it makes a great handle to remove the fritta from the pan once it cools!.
Skip the stove top portion, pour the mixture directly in the pan lined with parchment paper and put right in the oven!.

"A" is what I'd do!.
Here's a recipe for a frittata done completely in the oven!. I think this is your best bet!. You can follow the basic instructions and substitute other ingredients for the spinach, mushrooms, etc!. :
1 (10 ounce) package frozen chopped spinach, thawed and squeezed thoroughly to remove liquid
4 eggs or equivalent egg substitute
1 cup part-skim ricotta cheese
3/4 cup freshly grated Parmesan cheese
3/4 cup chopped portobello mushrooms
1/2 cup finely chopped scallions with some green tops
1/4 teaspoon dried Italian seasonings
1 pinch Salt and pepper, to taste
Preheat oven to 375 degrees!.
In a large bowl, whisk together all ingredients until well mixed!. Spray a 9-inch pie plate with cooking spray and fill with the spinach mixture!.
Bake for 30 minutes, or until browned and set!. Let cool for 20 minutes, cut in wedges and serve!.Www@FoodAQ@Com
