use the brown potatoes!.!.russet potatoes

-cut them into french fries

-then blanche them!. put them in hot water then cold water and repeat this several times, this gives them that "restaraunt" taste

-heat some oil, and after its hot put in the fries!. cook them until they start to cook on the outside, just around the time they start to turn color

-take them out and let them cool, about 10-15 minutes

-then put them back into the oil again and cook them until they are golden brown

taking them out to let them cool and then cooking them will make the outside nice and crisp, while keeping the inside soft!.!.!.like the french fries you buy at a restaraunt!.

*DON'T just cut them up and fry them up, they will turn out all limp and they won't taste like fries at all, but instead pieces of potato cooked in oil!.

*the type of potato is important, the brown type, russet potato
*blanching them is very important to get that resturant taste

Peel and cut the potatoes ,make sure you cut them in fairly even sizes!. you should rinse them in cold water,and leave them in the water while you prep the other stuff!. use vegetable or canola oil,or peanut oil to fry them, they have a high burn temperature!.

Heat the oil, should be enough to cover the potatoes!. the oil can be tested by putting a small drop of water in it, if the water sizzles out real fast,the oil is hot!. Drain the potatoes,and if possible, pat them dry!. put them in the oil, but don't overcrowd the pot or skillet!. when the fries start to float they are almost ready, give them another minute and remove them!. We used to make our own fries at my mom-in-laws resturant!. You can leave the skin on or peel them!. Cut them into thin strips, rinse in cold water to remove a good amount of the starch!. Drain well in a strainer, then move to a cookie sheet with paper towels!.

Heat 3-4 inches of oil in a large pot!. Put the potatoes in for a few quick minutes!. Remove from oil, drain then fry again!. Drain then season!.

You do not need to blach them to get them crispy!.

You could also precook them in the microwave, then cool them and slice them!. This way you only need to fry them once!.Www@FoodAQ@Com

2kg Large potatoes, peeled!.
Vegetable oil for deep frying!.
(I) Wash or soak in cold water and thoroughly dry potatoes and cut lengthways into 10mm sticks!.
(II) Heat oil and lower chips into the pot a few at a time into moderately hot oil!. Cover and cook for about 4 minutes, or until pale golden!.
(III) Remove and place on paper towels!. Repeat with rest!.
(IV) When ready to serve reheat oil, and cook again in batches, until crisp and golden!. Drain on a paper towels!.
