Squash Casserole?!
I need a yummy recipe for squash casserole!. All I can find is the one using cheese and ritz crackers!. I'm looking for the old one my mom used to make!. Any help will be appreciated!. Thanks!Www@FoodAQ@Com

Mine doesn't have a crust at all!. But I'll list it anyway!.
2 pounds of summer squash, sliced
2 onions, sliced thin
2 TB butter
salt and pepper
1 cup of cheese of your choice
1/2 cup of evaporated milk
boil squash and onions until tender!. Drain!. Stir in butter and salt and pepper to taste!. In large pan, spread a layer of the squash mixture and top with a handful of cheese!. Repeat until all squash is used!. Poke holes down into the layers (I use a chopstick) and pour evaporated milk over the top!. Cover with remaining cheese (or extra if you got cheesey in the layering) and bake at 400 until top is bubbly and browning!.

Instructions:
Boil the squash and onions together with salt until tender in water to cover!. (Approx 10 minutes)
While vegetables are boiling, mix together the soup and sour cream!.
Drain the vegetables and gently fold them into the mixture!.
Spread it into a 9x13 pan!.
Melt the stick of butter in a medium bowl and blend it with the stuffing!.
Top the squash mixture with the stuffing and bake at 375oF for 45 minutes or until top is golden!.Www@FoodAQ@Com

Sprinkle some sugar and sea salt over them and cover them!.!.!.!.!.!.!.this will draw some of the water out of them!.!.!.!.!.!.!.!.!.!.drain them!. put in the microwave on medium for about 5 minutes!.!.!.!.!.!.!.!.!.drain them again!.!.!.!.!.!.!.!.!.!.
2!. jalapeno-----optional-----take out the seeds and dice
3!. red onion----to taste-----and optional----diced like a few tablespoons
4!. clove of fresh garlic---optional----smashed and diced
5!. 1 tablespoon milk
6!. grated yellow cheese stir in and put some on the top too!.
7!. black pepper-----optional------to your liking
Heat the above in the microwave in a buttered and covered microwave dish until the squash is tender on medium!. Or you can bake it in the oven for about 30 minutes at 325!.

I make one with yellow crookneck squash with onion, sour cream, melted butter, homemade bread crumbs and spices, different ones at different times!. I have used Italian, montreal steak, Mrs Dash, but I have also used cheese!. Maybe these ideas will help jog your memory!.Www@FoodAQ@Com
