Wow I got to this TOO late but maybe it will help for next dinner!.
I too don't make dinner often sadly, I mean real dinner!. I usually do something quick- We do breakfast a lot for dinner- scrambled or fried eggs, bacon, tator tots for hashbrowns and either blueberry muffins (box mix) or just toast with butter!.
However there is this really yummy casserole I do now and then when I know we will all be home that night together!. It is called Chicken Ole!

As for tonight I would just say "Ahh forget it, get out the haggan daaz!.!."

Edit: HEY! I just realized Kate wrote out chicken ole!! Ahhh! Hey I didn't know that was even a known recipe! Wow!.!.!.I must live in a closet!. Oh well!.!.!.!.so there ya go!. Thanks a lot KATE!.

Edit again: oooh wait I went over her recipe and mine is soooo much better!. hehehehe!.
No really though, I mean I like using tortilla chips instead of actual corn tortillas, and my recipe calls for a 1 cup of sour cream and 1/2 cup of milk included in the wet ingredients ( along with the soups and green chiles) And I don't cook any chicken, I buy a rotisserie chicken because it is already cooked and moist!. I just shred it up!. And I add LOTS of cheese inbetween layers and black olives on top!

Every family has it's own "old standby" recipes, that they make all the time!. What's old to YOU, might actually be new and exciting to someone else!.!.!.!.!.!. we need to know exactly what the dinners are that you make constantly!. !.!.!. This is one of my favorites:


Lime Chicken Soft Tacos - Serves 4

1 pound chicken breasts, cubed

1/8 cup red wine

1 lime, juiced

1 teaspoon white sugar

1/2 teaspoon salt

1/2 teaspoon pepper

1 bunch green onions, sliced -white and green parts

2-3 garlic cloves

1 teaspoon dried oregano

8 small flour tortillas

diced tomatoes

lettuce

sour cream

salsa

cheddar cheese

Saute chicken, until cooked!. Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and oregano!. Heat through!. Serve with sour cream, cheddar cheese, chopped onion, chopped tomato, lettuce, salsa!.

Growing up my Mom would make a big breakfast for dinner!. Try a large deli platter and sides, a huge chef salad, chicken waffles, tuna casserole, chicken croquettes, meatloaf, fish sticks & fries, apple stuffed pork loin, smothered pork chops, smothered chicken, old fashioned baked chicken, reubens, polish sausage & kraut!. Think back to what your Mom & Grandma served and go from there!.Www@FoodAQ@Com

Chicken Provolone is one of my fav's!.

8 skinless, boneless chicken breast halves
4 slices provolone cheese, halved
2 (10!.75 ounce) cans condensed cream of chicken soup
10 3/4 fluid ounces white wine
1/4 cup melted butter
1 (16 ounce) package herb seasoned stuffing mix

Preheat oven to 350 degrees F (175 degrees C)!.
Arrange chicken breast halves in a single layer in a 9x13 inch baking dish!. Top each breast half with a half slice of Provolone cheese!.
In a medium bowl, blend cream of chicken soup and white wine!. Pour over the chicken!.
In a separate medium bowl, mix the butter and stuffing mix!. Top the chicken with the stuffing mixture!.
Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear!.Www@FoodAQ@Com

*Enchiladas (I use the easy recipe on the back of the Enchilada seasoning mix, but I use chicken instead of beef)
* Chili (many variations on allrecipes!.com) serve with cornbread
* BBQ baby back ribs: rub brown sugar on them, wrap in saran wrap then foil and cook in the oven for about an hour!. Then unwrap, cover with BBQ sauce and BBQ for 20 minutes!.
* Garlic chicken (see allrecipes!.com link below -- it's easy and delicious)
* Spaghetti with meatballs, garlic bread, salad
* BBQ beef sandwiches: put a chuck roast in slow cooker with BBQ sauce and water!. Cook 5 hours!. shred and serve with more BBQ sauce on rolls or buns!.Www@FoodAQ@Com

try tacos
baked chicken (just put chicken with skin and bone in a dish, put salt & pepper and a little slab of butter, bake for about 40-50 mins at 375) serve with potatoes or rice and a salad - so easy

try this chicken ole with a salad or green beans - great leftover too
1 chicken, cooked and boned (or just buy a rotisserie chicken from the deli at the market - already cooked!!)
12 corn tortillas
1 can (8 oz!.) chopped green chilies
1 can cream of mushroom soup
1 can cream of chicken soup
1 pound Kraft Grated Cheddar Cheese
Preparation Tear chicken into pieces (do not have to be bite size)!. Tear tortillas into pieces!. Drain the chilies!.

Mix all ingredients together, place in 9x13 pan, and cover pan!. Cook at 350 degrees for 1 hour!.

I made Swiss Steak for the first time in forever last night and it was sooo good!.

You buy some round steak or cube steak, brown it!. It doesn't need to be done all the way, just browned on the outside!.
Slice some onions, garlic, bell peppers and carrots and sautee them in the same pan with olive oil until the onions are clear!.
Once the veggies are done, pour about 1/4 cup of veggie/chicken broth in the pan, or white cooking wine, to get the "flavors" off the bottom of the pan - let that simmer for about five minutes!.
Then you pour a can of tomato sauce in with the veggies and a can of italian diced tomatos in there!. Let that simmer for about five minutes!.
Put the steak in a baking dish and pour the veggie sauce over the top!. Place it in your oven for one to three hours (45 minutes at the very least) on 375!. The longer you keep it in the oven (or crockpot) the more tender the meat will be!.

It was SOOOOO GOOD! I want to make it again!.

Marinate a london broil in soy sauce, some olive oil, fresh chopped garlic, juice of 1 lemon and chopped parsely!. Marinate from 2 to 24 hours!. If you marinate it for the lesser time keep out on counter and let meat get to to room temp for more tender meat!. Grill and serve with rice pilaf and a salad!. Save the marinade and pour it over the meat ond even dunk some good italian bread in it!. You wont get sick Ive been doing this dish for years and I am still here!. I hate the "RUTS"!.Www@FoodAQ@Com
