Turkey Loaf
Ingredients
* 1 cup whole wheat breadcrumbs
* ? cup low/fat-free milk
* 1? pounds lean ground turkey breast
* 1 white onion
* ? cup canned no-salt-added stewed or crushed tomatoes
* 1 stalk diced celery
* 1 egg or egg substitute equivalent
* ? cup minced fresh parsley
* 3 tsp!. of finely minced fresh jalape?o pepper
* ? teaspoon salt
* ? teaspoon pepper
* 3 tablespoons ketchup (approximate)
* Vegetable oil spray (optional)
Directions
Preheat the oven to 350o F!. Spray a loaf pan or use a non-stick one (approximately 10?x5?x2? inches)!.
Put the bread in a food processor or chopper to process into fine crumbs!. In a shallow bowl, combine the milk and breadcrumbs and the bowl soak while you prepare the remaining items in a separate bowl!.
Combine the remaining ingredients in a large bowl, except the ketchup and blend!. Drain any extra milk from the breadcrumb bowl, add to the turkey mixture, and blend well!. 1/4 cup brown sugar
Preparation:
Place ground beef in large bowl!. Add chopped onion and bell pepper!. Pour in a whole bottle of A-1TM Steak sauce, 1/2 medium bottle of ketchup, 1 small can tomato sauce!. Beat 2 eggs in cereal bowl and add enough evaporated milk to fill bowl!. Pour in meatloaf mixture and mix with hands thoroughly!. Add enough cracker crumbs to make the mixture stick together!.
Recipe makes 2 large loaves, so you could split and freeze half of the mixture!.
Mold meat into a loaf in a roaster or similar deep dish pan!. Bake at 350-375 degrees for about an hour and a half, or until it appears to be done!. You may also drain some of the juice off of the loaf before you top with glaze, but not too much because it will result in a dry meatloaf!.
Mix glaze ingredients and cover meatloaf with it!. Bake uncovered until coating is cooked!. Slice and serve!.

Lately, I have been craving meatloaf!. I looked online for recipes and kind of made up my own combination of ingredients and it was delicious!
I used a pound of very lean ground beef, 2 eggs (beaten), 3 slices of bread broken into small pieces, 1/2 cup of oatmeal, half of a green bell pepper diced, half of an onion diced, and a small can of tomato sauce!. I mixed it all together very well and put it in a rectangular Pyrex dish!. Cooked it for about 1 hour and 15 minutes on 375°F in my toaster oven!. After about an hour of cooking, I covered the top with a layer of ketchup!. It was delicious!Www@FoodAQ@Com

It's pretty hard to screw up a meatloaf unless you overcook it so it comes out dry!. Take a couple pounds of ground beef, turkey and/or pork!. Any combo will do, but the more turkey you use, the drier it can get, so you need to throw in lots of finely chopped vegies to make up for it!. Onions are always good!. You can also use spinach or other greens, mushrooms, and just about anything else including cheese!. Feel free to play with the flavors!. Worcester sauce, steak sauce, spices, mustard, whatever you like!. Throw in an egg or two to help it stay together and maybe 1/2 cup of bread crumbs or finely crushed crackers to help bind it!. mold it into a log in the bottom of a roasting pan or casserole!. You can spray the pan first with nonstick spray to easy cleanup later!. You can put catsup or bbq sauce or mustard on top for a glaze if you like!. Then throw it in a 350 oven uncovered for 45 minutes to an hour and you're home free!. If you have an instant read thermometer, you can check it for doneness!. Anything over 145 will be fine!. I didn't add spinach when I cooked it the first time but moistened the oats before adding - this turkey loaf (can be made with beef - turkey tastes better)is out of this world - a new favorite in my family!.
