Is mushroom gravy ok with roasted pork loin?!
And if it's a good match, how do I make the gravy from the meat drippings!? I've never made gravy before, please help!.

Sounds good!.
Take your drippings, skim off fat!. Saute mushrooms over fairly high heat in a couple Tbsp of fat (discard rest of fat), adding S&P to taste and a couple Tbsp flour to mushrooms!. Cook 1 minute after adding flour!. Add skimmed drippings liquid to mushrooms, scrape up any cooked-on bits, maybe add a splash of white wine, then reduce volume until gravy is as thick as you like!. You can also season w/ a pinch of thyme and a dash of Worcestershire sauce!.Www@FoodAQ@Com
