Squirrel Stew
Ingredients:
1 squirrel, quartered
1 cup diced onion
2 large tomatoes (from your garden) or 1 can of tomatoes
Assorted fresh ,or canned veggies
Preparation:
Sprinkle seasoned salt, pepper, and cayenne pepper (optional) liberally on the meat!. Pour some cooking oil into a large pot (dutch oven)!. Sauté the meat with the onions until well browned!. Drain the excess oil, add about 2 cups water, and bring to a boil!. Cut up the tomatoes and add!. If you use canned tomatoes add them now!. Turn down the heat, and let slow cook for at least an hour!. Important: older squirrels may require cooking longer than an hour!. Check periodically for tenderness!. If you don't you will have a hard time chewing the meat!. After the meat is tender, add the veggies, carrots, potatoes, banana pepper, what ever you like!. Cook until the veggies are done!. An option you can use is, cook up your favorite pasta and serve over the pasta!. (eliminate the potatoes)!.Www@FoodAQ@Com

i would always have my squirrel fried, medium rair, with good old traditional, potatoes, peas and gravy, a few onion rings if it's a special occiasion!. However, as your squirrel may not be fresh, more than likely disfiggered and probably with fair amount of rubber and road chippings - i'd recomend a stew!.Www@FoodAQ@Com

The trouble is that squirrel has such a small amount of meat for the amount of trouble it takes!. However if you want to try, here's what you do!. Cut down the under-belly and with draw the guts,lungs, heart and liver and kidneys!. Retain the offal!.
Cur off the paws!. Pull at the meat so that the legs pull out of the fur!. Cutting around the but of the beast you should now be able to roll up the fur from the meat, ending up with a parcel of fur with the head in the middle!. Cut through and dispose of the fur/head parcel!. Marinade in good real cider for a least three days!. Then cut into pieces, coat in flour and fry on all sides until the flour has gone golden!.!.!.2/3 minutes each side!. Put in a saucepan with the chopped offal, chopped onion, potato, carrot and a can of tomatoes with sauce, plus half a bottle of red wine!. Touch of chili and salt!.
Simmer for 90 minutes to two hours, or you can casserole it in the oven for two to three hours!. This is known as Brunswick Stew in Canada but something similar has been eaten all over Europe!. In Russia they would add wild fungi from the woods and some buckwheat to absorb the juices!.
If you are poor, hungry and can only find squirrel to eat this is magnificent!. A wild bird is easier!.Www@FoodAQ@Com

Oyster sauce , a bit of garlic , touch of oil!. pinch of salt and a tad of sugar!.
