Caprese Pasta Salad
Serves 6
* 3/4 cup olive oil
* 1/4 cup balsamic vinegar
* 4 cloves garlic, minced
* 1/4 cup fresh basil, chopped
* 1/4 teaspoon salt
* 1 cup capers
* 1/8 teaspoon freshly ground black pepper
* 1 pound plum tomatoes, chopped
* 1/2 pound fresh mozzarella cheese, cut into 1/2-inch chunks
* 1 package bowtie or pennette pasta, your choice

In a large bowl, combine the olive oil, vinegar, garlic, basil, salt, capers and black pepper; add the tomatoes and mozzarella and toss until well coated!.

Cook the pasta to al dente, according to the package directions!. Shower the pasta in cold water to stop the cooking, then drain!.

Place the pasta in a large bowl and add the tomato mixture!. Toss until well combined, then refrigerate for at least 30 minutes!. Serve cold!.

Here's my favorite recipe (a little more than 4 ingrediants):

1 package rotelle pasta, cooked according to package directions and cooled!.
1 bunch green onions, chopped
1 chub salami, cut into cubes
1 4 oz package feta cheese
1 can sliced olived
1 red bell pepper, seeded and chopped
1 large bottle Berensteins Cheese Fantastico Dressing

Blend the above together and chill for several hours or overnight!. Stir before serving!.

Other ideas:

Salad II

1 box bowtie pasta, cooked and cooled
1/2 cup frozen peas
1/2 cup chopped red onion
1/2 cup chopped celery
1/2 cup mayonaise
2 T mustard
salt and pepper

Salad III:

1 large can tuna, drained
1 package rotelle, cooked and drained
1/2 cup roasted red peppers
3 T capers
2 T lemon juice
Mayonaise to bind, season with salt and pepper

Salad IV:

1 package macaroni, cooked and cooled
1/2 cup chopped celery
1/2 cup chopped green onion
1/2 cup sliced olives
3 T dill weed
3 T sweet relish

Pasta Salad!.
1 lb pasta - shape of your choice
1 or 2 carrots, peeled and diced
1 small cucumber, cut into bite-sized pieces
1 red pepper, cut into dice
1 - 2 cups cut up meat, poultry, or fish (salmon has body and works well)
1 large tomato, cut up OR a cup of split cherry tomatoes
Any additional vegetables you like
1 cup frozen peas
1 envelope Good Seasons Italian dressing, mixed with vinegar and good olive oil
Grated parmesan cheese to add on top!.
Bring water to a boil and toss in the pasta to cook for the directed time!. While you're boiling the water and the pasta cut up all of your vegetables and the protein and mix the dressing!.
When the pasta is done cooking pour the frozen peas into your colander and then pour the pasta and it's water over the peas!. The boiling water will defrost them but leave the peas with body!.
Mix this in with the other vegetables and cut up protein!.
Pour the prepared dressing over this to taste, some like it wetter than others!. Add the parmesan to top!.Www@FoodAQ@Com

Pasta Caprese
Serves 4

Use garlic or not - best if you can let the ingredients marinate for at least an hour before you serve the dish!.

1 1/2 lbs fresh, ripe tomatoes, coarsely chopped
8 oz fresh mozzarella cheese cut into 1/2 inch cubes
4 T extra virgin olive oil, the best you can get
1 t red wine vinegar
1/2 cup fresh basil leaves, washed, dried and shredded
salt and freshly ground black pepper
1 lb pasta, preferably penne
1 - 2 cloves garlic (optional), chopped fine

An hour or so before your meal, using a wooden spoon, mix the mozzarella, tomatoes, oil and vinegar (optional garlic) in a deep bowl!. Season to taste with salt and freshly ground black pepper!. Cover with a clean dishcloth and let it sit at room temperature for an hour or so!. Add basil and toss well!.

Cook the pasta, remove when al dente, with a bite to it!. Drain pasta and return to the warm pasta pot!. Pour on tomato mixture and toss!.Check again for seasoning!. Place in serving bowl and serve!.Www@FoodAQ@Com

Ingredients:
Pasta (bow tie)
Broccoli
Cherry tomatoes
Onions
Salad dressing such as Kraft Signature Sundried tomato and oregano

1!. Boil pasta, when al dente strain!. Boil broccoli in pasta water for a few minutes (3-5)!.
2!. Half cherry tomatoes and dice onions!.
3!. Toss together pasta, broccoli, tomatoes, onions, and salad dressing!.
4!. Put in fridge for 2/3 hours!.
5!. Serve chilled!.

COLD PASTA PRIMAVERA

1 (10 oz!.) pkg!. primavera twists
1 can asparagus
1 1/2 c!. sliced mushrooms
1 c!. cherry tomatoes
1/2 red pepper, diced
1/2 yellow pepper, diced
1 can sliced black olives
1 sm!. bunch broccoli flowerets

DRESSING:

1 c!. vegetable oil
1/3 c!. salad vinegar
1/4 c!. chopped fresh parsley
3 tbsp!. chopped fresh basil
2 sm!. cloves garlic, minced
1/2 tsp!. salt
Freshly ground black pepper

Cook pasta according to package directions!. Drain, rinse with cold water!. Drain olives and asparagus and set aside!. Microwave broccoli flowerets on high in 3 tablespoons water 2-3 minutes (until bright green) and drain!. Combine pasta twists, asparagus, mushrooms, broccoli, olives, cherry tomatoes and peppers in serving bowl!. Combine dressing ingredients and pour over vegetables!. Mix thoroughly and refrigerate at least 1 hour before serving!. Serves 4-6!.Www@FoodAQ@Com

I make my own pesto sauce and use it for pasta salad and potato salad

I try and stay away from prepared salad dressings; you can't adjust the seasonings to your taste and usually they aren't all that good

you also might want to throw in broccoli or cauliflower and I'd also suggest maybe some sort of deli meat like salami or hamWww@FoodAQ@Com

The main thing about a pasta salad is to get the pasta well seasoned!. Mix a packet of Italian dry salad dressing using only half the liquid Oil water and vinegar add it to the pasta while it is still warm and you have half the battle won!. then add what you fancy the the rest of the dressing!. Let the warm pasta cool in the fridge before adding the rest of the ingredients!.Www@FoodAQ@Com
