Here is a great recipe that is phenomanal!. A little background though!. The original recipe, created by a man named Alfredo, was simply Hot Fettucine noodles tossed with butter and parmesan, with a sprinkling of parsley, and some fresh cracked black pepper!. The key to the dish is the parmesan cheese!. on the outside of the wheel, the cheese is drier, and as you progress to the center, it gets moister and creamier!. We do not get that quality of cheese here in the US, so you have to add some cream!. Here is the recipe!.

Fettucine Alfredo


1 Pkg Fresh Fettucine Pasta
6-8 oz Parmesan Cheese, grated freshly by hand
8 oz Heavy Cream
? lb Salted Butter
? cup Chopped Parsley



1 Make sure you buy good parmesan cheese!. You want nice full triangles with a minimum of rind and the maximum amount of the creamier center!.
2 Put the butter and cream in a saucepan and melt the butter into the cream over low to medium-low heat!. Use a whisk to mix it together!.
3 Meanwhile, your pasta should be ready to throw into boiling water!. Cook the pasta till it's al dente!.
4 Drain the pasta, but do NOT rinse it!.
5 Return the pasta to the pan you just cooked it in!. Pour the melted cream and butter mixture over the pasta!. Then, add the grated parmesan and toss the pasta!. As you toss the pasta, the parmesan will be perfectly melted into the cream mixture, giving you a silky, smooth sauce!. Make sure you do not add more cheese than the cream and butter can handle!. It is a bit of an art making sure it does not get too gummy!. You want to add enough cheese to give the sauce thickness and body, but no more!.
6 Add the Parsley, and toss once more!. Serve on warm plates with some freshly ground pepper!.

Tyler Florence did an easy Alfredo sauce for his food 911 show!. He did it with homemade pasta, but you could use store bought fresh or dried fetuccini!. Just be sure you take it off the boil just before it's tender and finish it off in the pan with the alfredo sauce!. It soaks up more flavor than just spooning the sauce on top!.

Here's the recipe!. My comments are in brackets!.

1 pint heavy cream
1/2 cup (1 stick) unsalted butter, softened
1 cup freshly grated Parmigiano-Reggiano [don't use plain dried parmesan!. You can use any good quality parmesan from the cheese dept if you can't get reggiano]
Freshly cracked black pepper
Chopped fresh flat-leaf parsley, for garnish

To prepare alfredo sauce: Heat heavy cream over low-medium heat in a deep saute pan!. Add butter and whisk gently to melt!. Sprinkle in cheese and stir to incorporate!. Season with freshly cracked black pepper!. In a large stockpot, cook pasta in plenty of boiling salted water for 3 minutes [or longer if you're using dried]!. Quickly drain the pasta and add it to the saute pan, gently toss the noodles to coat in the alfredo!. Transfer pasta to a warm serving bowl!. Top with more grated cheese and chopped parsley!. 4Tbs flour Hint add a little more butter and it won't fail!.
4Tbs unsalted butter
2 Cups cream slightly heated
Melt the butter in a sauce pan
slowly add the flour and when that is all Incorporated slowly add the cream, stirring all the time!.
That is the basic, you can add clams,garlic, Parmesan cheese parsley,thinly sliced mushrooms, whatever!. I don't remember what is Alfredo sauce and use linguine pasta I use extra thin spaghetti, I've never followed a reciipe, I just put in what strikes my fancy!.Www@FoodAQ@Com

Olive Garden Alfredo Sauce
Well I finally figured out how to get that taste!. Let the sauce simmer as long as you can!

1 pint of Heavy Cream
1 stick of butter
2 Tbsp!. Cream Cheese
1/2 - 3/4 C!. Parmesan cheese
1 tsp!. Garlic powder


Methods/stepsIn a saucepan combine butter, heavy cream, and cream cheese!. Simmer this until all is melted, and mixed well!. Add the Parmesan cheese and Garlic powder!. Simmer this for 15 - 20 minutes on low!. You may wish to season with a little salt and pepper!. I have done this with half and half, but we prefer the heavy cream!. But I wouldn't try it with plain milk!. let the sauce simmer about an hour or so!.Www@FoodAQ@Com

INGREDIENTS
1/4 cup butter
1 cup heavy cream
1 clove garlic, crushed
1 1/2 cups freshly grated Parmesan cheese
1/4 cup chopped fresh parsley


DIRECTIONS

At my work me make an al fredo pasta!.
just cook some sliced bacon, mushrooms and spring onions along with a bit of garlic!. when they are about 3/4 cooked add white wine to deglaze the pan!. cook off the alchohol, add cream and reduce by around half!. add salt pepper butter grated parmasean cheese and some parsley at the end!.

Easy Alfredo Sauce

1 pint heavy whipping cream
1/2 cup butter
1 1/2 cups grated Parmesan cheese

In a medium saucepan combine whipping cream, butter or margarine, and grated Parmesan cheese!. Cook over medium low heat until smooth!. Remove from heat!. Sauce will thicken upon standing!.Www@FoodAQ@Com
