Apricot chicken's pretty versatile and easy!. The basic recipe consists of laying chicken in a casserole dish, add apricot nectar (obviously lol) and french onion soup!. you can add veggies - potatoes, carrots, onion, and cabbage or silverbeet or bok choy go well in it!. Cover and cook in the oven and that's it! serve with rice or mashed potato!. Chicken thigh fillets work really well, or use legs!.

Ingredients (serves 4)

* 1/2 cup plain flour
* 1kg (8 pieces) skinless chicken cutlets or drumsticks, trimmed
* 2 tablespoons olive oil
* 1 large brown onion, peeled, cut into thin wedges
* 2 garlic cloves, crushed
* 1 tablespoon Moroccan seasoning blend
* 405ml can apricot nectar
* 1/2 cup Angas Park Large Dried Apricots
* 1 cup couscous
* 1/3 cup flat-leaf parsley leaves, chopped

Method

1!. Place flour and salt and pepper in a shallow dish!. Lightly coat chicken pieces in seasoned flour, shaking off excess!.
2!. Heat 1 tablespoon oil in a deep, large, heavy-based frying pan over medium heat!. Cook chicken, in batches, for 2 to 3 minutes each side or until golden!. Transfer to a plate!. Repeat with remaining chicken and oil!. Cover and set aside!.
3!. Add onion and garlic to frying pan!. Cook, stirring occasionally, for 3 to 4 minutes or until tender!. Sprinkle Moroccan seasoning over onion and stir until well combined!.
4!. Stir in apricot nectar!. Bring to the boil!. Reduce heat to low!. Return chicken to frying pan!. Cover with a lid or double piece of foil!. Cook for 20 minutes!. Remove cover and add apricots, pushing them into the sauce!. Cook, uncovered, for a further 20 to 25 minutes or until chicken is cooked through and sauce has thickened!.
5!. Meanwhile, place couscous in a heatproof bowl!. Pour over 1 cup boiling water!. Cover!. Stand for 5 minutes or until water has been absorbed!. Stir with a fork to separate grains!. Spoon couscous onto plates!. Spoon over chicken and sauce and sprinkle with parsley!. Serve!.Www@FoodAQ@Com

2 lb chicken pieces
1 package french onion soup mix
2 cup apricot nectar
1 1/2 lb apricot halves (canned)
1 flour (plain)


Directions

Dust chicken in flour!. Fry chicken lightly until starting to brown!.
Place chicken in a casserole dish or a very deep frying pan!. Add soup
powder, nectar and apricots!. Mix everything well!. Simmer for 1 hour!.

I normally use 2 pieces of chicken per person and about a 1 1/2 lb
can of apricot halves!. This will suffice for 4 to 6 people!. If you
cannot get nectar, then use the juice from the apricot halves!. (Of
course, if you can buy apricots in nectar!.!.!.)

The French onion soup quantity is not critical, but a soup packet that
makes up about 6 C is about right for 4 to 6 people!. Serve with potato
(baked or boiled), buttered carrots and peas!.

NOTES:

* Chicken embalmed in apricot nectar -- Apricot Chicken is the
ultimate bachelors delight!. It is very simple and tastes wonderful!.

came to visit me!. Yield: Serves 4-6!.

I found this recipe online and it is just like the one that I prefer!. If you search online, you will find a variety of recipes, but for some reason, this one is delicious and very easy!. Good luck!

Chicken pieces
1 can of apricot halves drained
1 can of apricot nectar
1 tablespoon of curry powder
2/3 packet of continental french onion soup mix
