Hi, all!. I'm making deviled eggs for a holiday cook-out today and don't want the whites of my eggs peeling off in pieces when I peel them to make the deviled eggs!. I want my eggs smooth!. I hate that!.!.have had the same thing happen, and had to turn it all into egg salad before even, because the eggs looked so bad!. Here are some good tips!.
* You can make the eggs easier to peel by using eggs at least one week old, and by adding plenty of salt to the boiling water!. You can also add two or three teaspoons of white vinegar to the water!. It is also easier to peel the eggs when they are properly cooled!.
* It is easier to peel the eggs if you crack it a little at the less pointy end, peel a little and then slide a spoon under the shell!. Just move the spoon around under the shell and it will easily remove the rest!Www@FoodAQ@Com

the absolute secret to peeling eggs is to buy the eggs week in advance!. as eggs age the amount of air in the shell expands so that when they cook there is a layer of air around the shell!. boil them at a fast boil, high temp so they really bounce around in the pan so the air is all the way around the egg!. use a pan large enough so the eggs can move around freely!.!.!.don't pack them in!.
since you are working on a time line still use the large pan so they can move around!. start them in cold water & when they start to really boil cook them 8 minutes!.!.!.set a timer! at 8 mins take them to the sink & run cold water over them!. drain them off while leaving about a half inch of water in the pan!. SHAKE the pan hard so the shells shatter - some pieces will come off!. continue to run cold water over them till the water stays cold & eggs have lost all their heat!.

One thing you can do is add a splash of vinegar to your cooking water!. A tbsp of white vinegar should help get the peels off!. I also add a tsp of salt to the water, as if to season the eggs!. When I make eggs, I put them in a pan of cold water, with the water above about an inch!. I bring the whole thing to a boil, then cover with a lid and turn the heat off, leaving the pan on the hot burner!. After 14 minutes, take the pan off the cooling burner and run each egg under cold water to stop the cooking process and peel while still a little warm!. This is how Martha Stewart does it (however, she goes 10 minutes and not 14---it could be the difference between her gas ranges and my electric range)!. Whenever I peel my eggs, I usually crush the whole outer shell into little pieces with a fork (but the shell is still intact)!. Then I peel the shell off, and it comes off easier and in bigger pieces, since there is a layer of skin between the egg shell and egg white!. But, do the crushed shell peeling gently!.Www@FoodAQ@Com

the first trick to having easy peel eggs is to us old eggs!. the fresher the egg the more apt the white is to come off with the shell!. I've also heard that if you put a couple of tablespoons of vinegar in the water it helps the shell come off easier, but i have found the benefit was nominal!. good luck!.

First tip is to use eggs that are not new, by that I mean use eggs that are half way to the expiry date!. They will peel cleanly and more easily after running under cold tap water after boiling!.

allow the eggs to cool off in the fridge, crunch the egg on to the work surface under your palm (dont wallop it) then roll the egg up and down et voila it will come off first time everytime, rinse any small pieces off with cold water and leave to dryWww@FoodAQ@Com
